GRILLED EGGPLANT STACKS WITH GOAT CHEESE, TOMATO AND BASIL SAUCE

Grilled Eggplant Stacks With Goat Cheese, Tomato and Basil Sauce image

A great summertime dish, this is an incredibly delicious recipe. I like to serve these eggplant stacks with grilled steak or chicken but these tasty stacks are good enough all on their own. The combination of the basil oil drizzled on the layers of eggplant with the goat cheese and tomato work so well together. You can't go wrong if you want to use feta instead of the goat cheese, I made a few with each and they are both equally delicious. If you are entertaining, these are a perfect choice to make ahead of time and than bake when you are ready to serve and they make a beautiful presentation!

Tips:

  • Choose the right eggplant: Look for eggplants that are firm, smooth, and have a deep purple color. Avoid eggplants that are bruised or have blemishes.
  • Slice the eggplant evenly: This will help them cook evenly. Use a sharp knife to cut the eggplant into 1/2-inch thick slices.
  • Salt the eggplant slices: This will help to draw out the moisture and prevent the eggplant from becoming bitter. Sprinkle the eggplant slices with salt and let them sit for 30 minutes.
  • Grill or broil the eggplant slices: This will give them a smoky flavor and help to tenderize them. Grill the eggplant slices over medium heat for 5-7 minutes per side, or broil them in the oven for 5-7 minutes per side.
  • Be careful not to overcook the eggplant: Overcooked eggplant will be mushy and bland. Cook the eggplant slices just until they are tender and slightly browned.
  • Use high-quality ingredients: The better the ingredients, the better the final dish will be. Use fresh, ripe tomatoes, creamy goat cheese, and flavorful herbs.
  • Season the eggplant rolls to taste: Add salt, pepper, and other spices to taste. You can also add a squeeze of lemon juice or a drizzle of olive oil.

Conclusion:

Broiled eggplant rolls with goat cheese and tomato are a delicious and elegant appetizer or main course. They are easy to make and can be customized to your liking. With a few simple tips, you can make sure that your eggplant rolls are perfect every time. Serve the eggplant rolls warm or at room temperature. They are also delicious the next day. Enjoy!
