WHITE ASPARAGUS WITH MUSHROOMS IN BROWN BUTTER

White Asparagus With Mushrooms in Brown Butter image

White asparagus is not actually a special variety of asparagus. It is grown in the ground covered with sand or soil so it does not receive the sunlight needed to develop the chlorophyll that gives green asparagus its color. White asparagus tend be milder and more tender then green asparagus. I found that adding both sugar and salt to the water and boiling it for about 5-6 minutes was perfect. The brown butter is an excellent accompaniment to the white asparagus. Hope you like it!

Tips:

  • Choose fresh, vibrant asparagus and artichokes: Look for asparagus spears that are firm and green, with tightly closed tips. Artichokes should be heavy for their size, with tightly packed leaves.
  • Prepare the artichokes properly: Trim the artichoke stems and remove the tough outer leaves until you reach the tender, pale green leaves. Cut the artichokes in half lengthwise and scoop out the fuzzy choke.
  • Marinate the vegetables: Marinating the asparagus and artichokes in a mixture of olive oil, lemon juice, garlic, and herbs enhances their flavor and keeps them moist during broiling.
  • Use a hot broiler: Preheat the broiler to its highest setting to ensure that the vegetables cook quickly and evenly. Keep an eye on the vegetables to prevent burning.
  • Baste the vegetables with the marinade: Basting the vegetables with the marinade during broiling helps them caramelize and develop a delicious golden brown color.

Conclusion:

Broiled asparagus and artichokes with white wine brown butter is a simple yet elegant dish that showcases the delicate flavors of these spring vegetables. The combination of broiling and basting with a flavorful marinade results in tender-crisp vegetables with a caramelized exterior. The white wine brown butter sauce adds a rich, nutty flavor that complements the asparagus and artichokes perfectly. This dish is perfect for a light lunch or dinner, and it can also be served as a side dish to grilled or roasted meats.
