Think of this dish as Chicken Teriyaki with a South Asian flair, or India meets the other flavors of Asia.

Time 30m

Yield 4

Number Of Ingredients 11

¼ cup plus 2 tablespoons dark brown sugar, packed
¼ cup plus 2 tablespoons soy sauce
3 tablespoons fresh lime juice, from 2-3 limes
1½ tablespoons vegetable oil
½ teaspoon Asian sesame oil
¾ teaspoon Garam Masala (substitute curry powder if you can't find it)
3 cloves garlic, minced
1½ teaspoons fresh grated ginger
½ teaspoon cayenne pepper (use less if you don't like heat)
8 skinless, boneless chicken thighs
2 scallions light and dark green parts only, thinly sliced

Steps:

  • In a medium bowl, mix together all of the ingredients except for the chicken and scallions. Set ¼ cup of the marinade aside and cover (you'll use this later for the sauce), then place the rest in a zip-lock freezer bag with the chicken thighs. Be sure the chicken is evenly coated with the marinade, then place the bag in the refrigerator (in a bowl in case of leakage); let marinate for 3-4 hours.
  • Preheat grill to high heat.
  • Grease the grill. (Lightly dip a wad of paper towels in vegetable oil; then, using tongs, carefully rub the towels over the grates several times until glossy and coated.) Place the chicken on the grill; cover and cook 3-5 minutes on each side, or until nicely browned and done. Transfer the chicken to a serving platter, then top with the reserved marinade and sliced scallions.

CHEF JOHN'S BROILED CHICKEN

Chef John's Broiled Chicken image

The next time rain ruins your dream of a grilled chicken dinner, I hope you fire up your broiler and give this easy, alternative method a try. Not only are you getting the same intense, direct heat, but you also have more control, since you can adjust how far the chicken is from the flame. I prefer the meat about 7 to 8 inches under the heating element, but feel free to adjust as needed. Garnish with freshly squeezed lemon juice and fresh oregano.

Time 40m

Yield 6

Number Of Ingredients 3

1 small onion, sliced
1 (3 pound) whole chicken, cut in half, backbone removed
salt as needed

Steps:

  • Set oven rack about 6 inches from the heat source and preheat the oven's broiler.
  • Spread onion slices in a single layer on the bottom of a baking dish. Season chicken with salt. Place chicken halves, skin-side down, over onion rings.
  • Cook chicken in the preheated oven, turning every 7 minutes, until caramelized, no longer pink at the bone, and the juices run clear, about 30 minutes. An instant-read thermometer inserted into the thickest part of the thigh, near the bone should read 165 degrees F (74 degrees C).

BOILED CHICKEN, CHINESE STYLE

Boiled Chicken, Chinese Style image

This is an original recipe by Jeff Smith, from the cookbook "The Frugal Gourmet". Use for Chicken with Leeks and Cream recipe, as well as other recipes that call for cooked chicken. Have also used method for boneless chicken thighs with great results. In this recipe we do not actually boil the bird at all but rather place it in boiling water and then leave it alone. Please read the instructions carefully. This dish is so simple and so delicious that you will think the instructions are incorrect.

Categories     Whole Chicken

Time 1h10m

Yield 4-6 serving(s)

Number Of Ingredients 2

1 roasting chicken (can use whole chicken or chicken breasts or thighs)
boiling water

Steps:

  • Fill a large kettle with water, and bring to a boil. (An 8 quart pot two-thirds filled with water works great for a 2 1/2 - 3 pound bird). When the water boils, place the whole cleaned chicken into it. When the water stops boiling, take the chicken out. Cover the pot, and when the water again boils, place the chicken back in the pot. Cover the pot, and turn off the heat. Leave the chicken in the pot and the pot on the burner. After 1 hour the chicken is done. Remove and cool.
  • You can debone this chicken in very little time. If you are on a low-salt/low-fat diet, be sure to remove the skin. Save the juices that flow from the bird when deboning because this liquid contains a great deal of natural gelatin and will help keep the bird moist if you should decide to store the meat in the refridgerator. The chicken is ready to serve or use.

Tips:

  • Use a flavorful marinade: The marinade is what gives the chicken its flavor, so make sure to use a flavorful one. The recipe in the article uses a marinade made with soy sauce, honey, garlic, and ginger, but you can use any marinade you like.
  • Let the chicken marinate for at least 30 minutes: The longer the chicken marinates, the more flavorful it will be. If you don't have time to marinate the chicken for 30 minutes, you can marinate it for a shorter period of time, but the flavor will not be as intense.
  • Broil the chicken on a high heat: Broiling the chicken on a high heat will help to create a crispy skin and juicy interior. Make sure to preheat your broiler before cooking the chicken.
  • Watch the chicken carefully: Broiling the chicken on a high heat can easily result in overcooked chicken. Watch the chicken carefully and remove it from the broiler as soon as it is cooked through.

Conclusion:

Broiled Asian chicken is a quick and easy weeknight meal that is packed with flavor. The chicken is marinated in a flavorful marinade and then broiled until cooked through. Serve the chicken with your favorite sides, such as rice, vegetables, or noodles.
