BROCCOLINI AND BALSAMIC VINAIGRETTE

Broccolini and Balsamic Vinaigrette image

Categories     side-dish

Time 20m

Yield 6 servings

Number Of Ingredients 8

Kosher salt
4 bunches broccolini (1 1/2 pounds)
1/4 cup good olive oil
11/2 tablespoons balsamic vinegar
1/2 teaspoon Dijon mustard
1 teaspoon minced garlic
1/2 teaspoon freshly ground black pepper
1 lemon

Steps:

  • In a large pot, bring 8 cups of water and 2 tablespoons salt to a boil. Remove and discard the bottom third of the broccolini stems. If some stems are very thick, cut them in half lengthwise.
  • Meanwhile, in a small bowl, whisk together the olive oil, balsamic vinegar, mustard, garlic, 1 1/2 teaspoons salt, and the pepper. When the water comes to a full boil, add the broccolini, return to a boil, and cook over high heat for 2 minutes, until the stalks are just tender. Drain well and place in a large bowl. Pour enough dressing over the broccolini to moisten and toss well. Splash with a generous squeeze of fresh lemon juice, sprinkle with salt, and serve warm or hot.

Tips:

  • Choosing the right broccoli: Look for broccoli with tightly closed florets and a deep green color. Avoid broccoli with yellow or wilted florets.
  • Preparing the broccoli: Cut the broccoli into bite-sized florets. You can also peel the stems and slice them thinly.
  • Cooking the broccoli: There are several ways to cook broccoli. You can boil it, steam it, roast it, or sauté it. Boiling or steaming is the quickest and easiest method, but roasting or sautéing will give the broccoli a more flavorful and caramelized texture.
  • Making the balsamic dressing: The balsamic dressing is a simple but flavorful combination of balsamic vinegar, olive oil, garlic, and herbs. You can adjust the proportions of each ingredient to taste. If you don't have balsamic vinegar, you can substitute another type of vinegar, such as red wine vinegar or white wine vinegar.
  • Serving the broccoli: The broccoli can be served warm or cold. If you're serving it warm, drizzle the balsamic dressing over the broccoli immediately after cooking. If you're serving it cold, let the broccoli cool completely before dressing it.

Conclusion:

Broccoli with balsamic dressing is a delicious and healthy side dish that can be enjoyed as part of a variety of meals. It's a great way to add more vegetables to your diet, and the balsamic dressing adds a flavorful and tangy twist. With just a few simple ingredients and a few minutes of cooking time, you can have a delicious and nutritious side dish that the whole family will enjoy.
