  • Cook penne; 4 mins before the end of cooking, throw in broccoli florets. Meanwhile, heat olive oil, add a handful chopped walnuts and fry gently for 1 min.

12 ounces riccioli, fusilli or other short pasta
1/2 cup olive oil, plus more for drizzling
1/2 cup walnuts or pecans, chopped

Steps:

  • Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente.

1 pound cut pasta, such as medium shells
1 large garlic clove, smashed
2 packed cups fresh mint leaves (about 2 ounces from one small bunch)

1/2 cup extra-virgin olive oil, plus more for serving
1 lemon, zested and juiced
Parmigiano-Reggiano, for serving

  • Divide among serving dishes and top with lemon zest, then grate cheese over. Sprinkle with the walnuts, grind more black pepper on top, then drizzle with olive oil. Serve hot, warm or room temperature.

8 1/2 ounces broccoli florets
2 tablespoons olive oil
1/4 cup walnuts, chopped

1 lb fettuccine pasta
3 cups broccoli florets
1/2 cup parmesan cheese, grated
3/4 cup blue cheese, crumbled (all kinds work well)
2 garlic cloves, minced
3 -4 tablespoons butter
1 tablespoon cracked black pepper

  • Cook pasta according to directions. Add the broccoli when pasta almost done to partially cook it.
