4 c. herb seasoned stuffing mix (not quite all of a 12-ounce package)
3/4 c. unsalted butter, melted
1 (16 oz.) package frozen broccoli florets
1 (10 3/4 oz.) can cream of mushroom soup
1 (7.5 oz.) tub chive & onion cream cheese
1/4 c. milk
1 egg, lightly beaten
1/8 tsp. salt
1/8 tsp. pepper

Steps:

  • Combine melted butter and stuffing mix; toss with a fork until all stuffing pieces are coated. Set aside.
  • Thaw broccoli and warm in the microwave for about 3 minutes; drain very well. Cut any large florets into smaller, bite-sized pieces.
  • In a mixing bowl, whisk together cream of mushroom soup, chive & onion cream cheese, milk, egg, salt, and pepper. Fold in broccoli.
  • Spoon 2 & 1/2 cups stuffing mixture into the bottom of a greased 9x13-inch baking dish, spreading evenly.
  • Spoon broccoli mixture on top of stuffing layer, spreading evenly. Sprinkle remaining stuffing mixture on top.
  • Bake at 350℉ for 30-35 minutes, until heated through and bubbly around the edges.
  • We use Pepperidge Farm herb-seasoned stuffing mix. Be sure to get regular stuffing mix, NOT cubed.

1 large egg, slightly beaten
1 pkg 10 oz. frozen broccoli chopped, partly thawed
1 can(s) 8 1/2 oz. cream style corn
1 Tbsp grated onion
1/4 tsp salt
1 dash(es) pepper
3 Tbsp butter or margarine
1 c herb seasoned stuffing mix

Steps:

  • 1. In mixing bowl, combine egg, broccoli, cream style corn, onion, salt & pepper.
  • 2. In small sauce pan, melt butter then add herb seasoned stuffing mix. Add 3/4 cup of it to broccoli mixture. Put into ungreased 1 qt. casserole dish.
  • 3. Sprinkle with remaining 1/4 cup stuffing mix. Bake uncovered at 350 for 35 to 40 mins.

1 (10.5 ounce) can Cream of Chicken Soup
8 ounces of sour cream
3 cups cooked turkey, diced (or rotisserie chicken)
1 box of stuffing mix, prepared - or leftovers
2 cups of frozen broccoli - or fresh
6 slices American cheese

Steps:

  • Preheat oven to 350°F
  • In a bowl, mix the chicken soup, sour cream & turkey OR 2 cups leftover gravy & turkey.
  • Place the turkey mixture in a sprayed 8x11 casserole dish.
  • Microwave broccoli for 2 minutes in pouch or box. If using fresh, boil for 5 minutes, until tender.
  • Drain water from broccoli well. Sprinkle warmed broccoli on top of turkey.
  • Cover broccoli mixture with prepared stuffing.
  • Bake for 18 minutes.
  • Remove from oven and top with American cheese.
  • Bake for another 2 minutes or until cheese is melted.
  • Remove from oven and devour immediately!

6 cups seedless red grapes (about 3 pounds)
1 cup sliced celery
6 green onions, sliced

1 lb fresh broccoli, broken into big pieces (florets and stems)
4 tablespoons butter
1 tablespoon flour
1 teaspoon salt
1 teaspoon pepper
3 ounces cream cheese
1 cup grated cheese (cheddar or colby or mozza-I like to mix cheddar and colby)
1 cup milk
1 cup breadcrumbs

Steps:

  • Cook onion and broccoli in boiling water for 8 minutes. Drain and put in a large casserole dish.
  • Melt 2 tbsp butter over low heat. Add flour, salt & pepper. Add milk, stirring until thick and bubbly. Add the cream cheese, stirring until melted. Pour sauce over veggies. Sprinkle grated cheese over top.
