4 tablespoons (1/2 stick) salted butter
1 medium yellow onion, finely diced
1 clove garlic, grated
4 tablespoons all-purpose flour
1/2 teaspoon dry mustard
1/4 teaspoon cayenne
3 cups whole milk
4 ounces cream cheese, at room temperature
1/2 cup grated Parmesan
1 teaspoon freshly ground black pepper
1/2 teaspoon kosher salt
1/2 teaspoon paprika
8 ounces processed cheese, cubed
3 cups grated sharp Cheddar
8 cups small broccoli florets
6 ounces diced pimentos, drained
2 1/2 cups cooked long-grain rice

Steps:

  • Preheat the oven to 350 F degrees.
  • In a large skillet, melt the butter. Add the onion and garlic and cook, stirring with a wooden spoon, until softened, 3 to 4 minutes. Sprinkle over the flour, dry mustard and cayenne and stir to mix it in well. Continue to cook for 1 minute.
  • Next, add the milk, stirring constantly; cook until thickened, about 2 minutes. Add the cream cheese and Parmesan, stirring until totally combined. Stir in the pepper, salt and paprika. Add the processed cheese, stirring until completely melted. Next, add 1 1/2 cups of the Cheddar and stir until melted. Then, fold in the broccoli and pimentos.
  • In a large baking dish, create a base with half of the rice. Top with half of the broccoli cheese sauce. Repeat with the remaining rice, then the remaining sauce. Sprinkle the rest of the Cheddar evenly over the top of the casserole. Bake until bubbly, about 30 minutes.

2 (10 ounce) packages frozen chopped broccoli
3 cups instant rice
1 (10.75 ounce) can condensed cream of mushroom soup
1 (10.75 ounce) can condensed cream of chicken soup
1 ¼ cups water
1 (16 ounce) package processed American cheese, cubed
1 tablespoon butter
1 bunch celery, chopped
1 large onion, chopped
salt and pepper to taste

Steps:

  • Cook broccoli and rice according to package directions. Preheat oven to 350 degrees F (175 degrees C).
  • In a medium saucepan over low heat, mix cream of mushroom soup, cream of chicken soup, and 1 1/4 cups water. Gradually stir in cheese until melted. Be careful that the cheese doesn't burn.
  • Melt butter in a large skillet over medium-high heat, and cook and stir celery and onion until soft.
  • In a large mixing bowl, combine broccoli, rice, soup and cheese mixture, celery and onion. Season with salt and pepper. Pour mixture into a 9x13 inch baking dish.

The flavor from the Rice A Roni is delicious and adding the broccoli,mushrooms and water chestnuts took it over the top! Makes a great addition to your holiday meal or any family...

2 (6.4 oz) box creamy four cheese rice a roni
1 large onion,chopped
2 clove garlic,minced
2 c fresh or frozen broccoli flowerettes,cooked until tender
1 (7 oz.) jar(s) sliced mushrooms,drained
1 (8 oz.) can(s) water chestnuts,chopped
2 can(s) cream of celery or mushroom soup
1-2 c cheddar or monterey jack cheese,depending on how cheesy you want it
2 Tbsp chopped fresh parsley
1/2 tsp freshly ground black pepper
salt to taste
1/2 c chicken stock or broth;more if needed

  • 1. In a large deep non stick skillet,cook Rice A Roni according to box directions.

2 cups uncle ben's long grain and wild rice blend, cooked
1/2 cup celery
1 (10 3/4 ounce) can cream of chicken soup
1/2 cup milk
1/4 cup onion, chopped

1/2 lb butter
8 ounces Cheese Whiz

Steps:

  • Thaw and drain broccoli.
  • Saute onions, celery, and butter.
  • Blend broccoli, rice, cream of chicken soup, milk, water chestnuts and 4 oz cheese whiz. Add the onions, celery, and butter mixture.
  • Put remaining 4 oz of cheese whiz on the top.
