1 large russet potato, peeled and cut into 1-inch chunks
1 pound broccoli florets
1/2 cup chicken broth
4 ounces cream cheese
1/4 cup freshly grated Parmesan
Salt and freshly ground black pepper

Steps:

  • Fill a large pot with enough water to come 2 inches up the sides of the pot. Set a steamer rack in the pot, cover, and bring the water to a boil over high heat. Add the potato chunks and cook until they are very tender, about 18 minutes. Transfer the potatoes to a medium bowl and mash until smooth.
  • Place broccoli into steamer rack and steam over medium heat until the broccoli is very tender, about 12 minutes. Transfer the broccoli to the bowl of a food processor. Add the broth, cream cheese, and Parmesan. Process until the broccoli is pureed and almost smooth.
  • Stir the broccoli puree into the mashed potato and blend well. Season the puree to taste with salt and pepper, and serve.

1 bunch of broccoli, cut in florets, stalks peeled and cut into 1-inch pieces
2-inch piece of fresh ginger, peeled
2 teaspoons soy sauce
1 teaspoon rice wine vinegar
1 teaspoon toasted sesame oil
1 scallion, sliced thinly on bias
1 red pepper, diced
Toasted sesame seeds for garnish

Steps:

  • In a steamer place the stems on the bottom, slice 3 thin slices of ginger, place over stems and top with broccoli florets. Steam broccoli for 5 minutes.
  • Grate the rest of the ginger, there should be about 2 teaspoons. Mix the ginger with soy, vinegar, and sesame oil, and toss with broccoli (remove the ginger slices before serving). Arrange on platter, top with red pepper, scallions and sesame seeds

Steps:

1 bunch broccoli, about 1 1/2 pounds
Salt to taste
3 tablespoons butter
1/2 teaspoon finely minced garlic
Freshly ground pepper to taste
1/4 teaspoon freshly grated nutmeg
2 tablespoons freshly grated Parmesan chees

  • Trim and cut the broccoli into florets. If the stems are large, trim and cut them into large bite-size pieces. There should be about 6 cups.
