BROCCOLI AND LEFTOVER MASHED POTATO SOUP

Broccoli and Leftover Mashed Potato Soup image

This is a super easy and flavorful soup I came up with to use my leftover mashed potatoes in a healthy way. Between Thanksgiving and Christmas there is a great opportunity to have leftover mashed potatoes. Here is a soup I came up with that will use up those potatoes and fill your stomach with what my husband calls 'dangerously good soup!'

Provided by Norma Jean

Categories     Potato Soup

Time 35m

Yield 8

Number Of Ingredients 13

2 teaspoons bacon drippings
1 onion, diced
4 stalks celery, chopped
1 pound bulk pork sausage
1 teaspoon dried sage
½ teaspoon paprika
salt and ground black pepper to taste
4 cups finely chopped broccoli florets
4 cups reduced-sodium vegetable broth
4 cups leftover mashed potatoes
1 (15 ounce) can whole kernel corn, drained
1 (7 ounce) can diced green chilies
2 cups sour cream

Steps:

  • Heat bacon drippings in a large, deep saucepan or soup pot over medium-high heat. Add onion and celery; saute until softened, 3 to 5 minutes. Add sausage, sage, paprika, salt, and pepper; continue to saute, mashing up the sausage into small pieces until browned and no longer pink, 5 to 7 minutes.
  • While sausage is cooking, poke several holes in a zip-top bag and add broccoli (this allows steam to escape). Microwave for 3 minutes.
  • Pour broth into sausage mixture, then add mashed potatoes. Mix well, then add the broccoli, corn, and green chilies. Stir to combine all well and then add the sour cream. Taste and add more salt and pepper as needed. Let simmer for about 10 more minutes for flavors to meld.

Tips:

  • Choose the right potatoes: Russet potatoes are the best choice for mashing because they are starchy and fluffy. Yukon Gold potatoes are also a good option, as they have a slightly sweeter flavor.
  • Cook the potatoes until they are very tender: This will ensure that they are easy to mash and will have a smooth texture.
  • Use a potato ricer or masher: A potato ricer will give you the smoothest mashed potatoes, but a masher will also work well.
  • Season the mashed potatoes to taste: Salt and pepper are essential, but you can also add other seasonings, such as garlic powder, onion powder, or fresh herbs.
  • Add milk or cream for a creamier texture: If you want your mashed potatoes to be extra creamy, add a little milk or cream. Be careful not to add too much, or the potatoes will become too thin.
  • Serve the mashed potatoes immediately: Mashed potatoes are best when served hot and fresh.

Conclusion:

Broccoli potato mash is a delicious and healthy side dish that is perfect for any occasion. It is easy to make and can be tailored to your own taste preferences. Whether you like your mashed potatoes smooth or chunky, creamy or light, this recipe has you covered. So next time you are looking for a quick and easy side dish, give broccoli potato mash a try. You won't be disappointed!
