Steps:
- Preheat oven to 350. Sauté onion in 2 to 3 tablespoons oil in a small frying pan over medium heat until browned. Add garlic and stir for a minute or two. Set aside. In large mixing bowl mash potatoes and stir in eggs, one by one, incorporating well. Add mayonnaise, matzo meal, salt and pepper, stirring well. Fold in onion and broccoli. Grease a 9-by-13-inch baking pan and spoon in mixture, spreading evenly. Sprinkle with panko or challah crumbs. Bake for 50 minutes or until golden brown.
Tips:
- Boil the potatoes until they are just tender: Overcooked potatoes will become mushy in the kugel.
- Grate the potatoes while they are still warm: This will make them easier to grate and will help the kugel hold together.
- Use a food processor to chop the broccoli: This will save you time and will help the broccoli distribute evenly throughout the kugel.
- Don't overmix the batter: Overmixing will make the kugel tough.
- Bake the kugel until it is golden brown and a toothpick inserted into the center comes out clean: This will ensure that the kugel is cooked through.
- Let the kugel cool for a few minutes before slicing and serving: This will help it hold together better.
Conclusion:
Broccoli potato kugel is a delicious and versatile dish that can be served as a main course or a side dish. It is also a great way to use up leftover mashed potatoes and broccoli. This recipe is easy to follow and can be made in about an hour. So next time you're looking for a hearty and satisfying meal, give broccoli potato kugel a try!
