Ordinary but good casserole to pull out of the freezer for a home cooked side dish! I modified this recipe after the comments to add the oven temp. :)

Time 55m

Yield 4 serving(s)

Number Of Ingredients 5

4 -5 potatoes, sliced
1 head broccoli, florets, blanched
1 (10 1/2 ounce) can broccoli cheese soup
1 (10 1/2 ounce) can milk, approx, to cover
shredded cheese

Steps:

  • This easy recipe freezes well if prepared with cooked potatoes and reheated in the oven.
  • In a casserole, put a few (4-5) sliced potatoes, the florets from a head of broccoli (blanched), a can of cream of broccoli and cheese soup, and enough milk to make the soup cover the veggies.
  • Throw in a handful or two of shredded cheese.
  • Cover, label and freeze.
  • It tastes like a broccoli-n- cheese baked potato.
  • Bake this in the oven for about 40 minutes.
  • For crockpot: use raw potatoes and cook for 2-3 hours or till done on high.
  • Freeze after cooking.

Tips:

  • Choose the right potatoes: For a creamy texture, use starchy potatoes like Russets or Yukon Golds. For a firmer texture, use waxy potatoes like Red Potatoes or New Potatoes.
  • Cut the potatoes evenly: This will help them cook evenly. If the potatoes are cut too small, they will overcook and become mushy. If they are cut too large, they will take too long to cook and may not be fully tender.
  • Roast the potatoes before baking: This will help them develop a crispy exterior and a fluffy interior. To roast the potatoes, toss them with olive oil and salt and pepper, then spread them in a single layer on a baking sheet. Roast at 425 degrees Fahrenheit for 20-25 minutes, or until they are tender and browned.
  • Use fresh broccoli: Fresh broccoli has a brighter green color and a more tender texture than frozen broccoli. If you are using frozen broccoli, be sure to thaw it completely before adding it to the casserole.
  • Don't overcook the broccoli: Broccoli should be cooked until it is tender-crisp. If it is overcooked, it will become mushy and lose its flavor.
  • Use a good quality cheese: The cheese is one of the main ingredients in this casserole, so it is important to use a good quality cheese that you enjoy. Sharp cheddar cheese is a classic choice, but you can also use other types of cheese, such as Gruyère, Swiss, or Parmesan.
  • Serve the casserole hot: This casserole is best served hot out of the oven. It can be served as a main course or a side dish.

Conclusion:

This broccoli potato bake is a delicious and easy-to-make casserole that is perfect for a weeknight meal. It is also a great way to use up leftover potatoes and broccoli. The casserole is creamy, cheesy, and packed with flavor. It is sure to be a hit with your family and friends.
