Time 55m

Yield 12 serving(s)

Number Of Ingredients 7

2 (10 ounce) packages frozen broccoli or 2 (10 ounce) packages frozen cauliflower
1 (10 3/4 ounce) can cream of celery soup or 1 (10 3/4 ounce) can cream of mushroom soup
2 beaten eggs
1/2 cup Hellmann's mayonnaise
2 cups shredded cheddar cheese
48 Ritz crackers, crumbled in (1 sleeve, wrap)
1/2 cup melted butter

  • Blend soup, mayonnaise, eggs and cheese together and pour over vegetables.
  • Top with buttered cracker crumbs.
  • Bake at 350°F for 20-40 minutes or until bubbling.

Tips:

  • Choose the right cheese: Use a good-quality cheddar cheese that will melt well. You can also add other cheeses to your liking, such as Parmesan, Gruyère, or Brie.
  • Use fresh vegetables: Broccoli and cauliflower are both at their best when they are fresh. If you can, use organic vegetables for the best flavor.
  • Cook the vegetables properly: Broccoli and cauliflower should be cooked until they are tender but still have a slight crunch. Overcooked vegetables will become mushy and lose their flavor.
  • Make a roux: A roux is a mixture of butter and flour that is used to thicken the sauce. This will help to create a smooth and creamy casserole.
  • Season to taste: Add salt and pepper to your liking. You can also add other seasonings, such as garlic powder, onion powder, or paprika.

Conclusion:

Broccoli or cauliflower cheese casserole is a delicious and easy-to-make dish that is perfect for a weeknight meal or a special occasion. It is a great way to use up leftover vegetables and it is also a good source of vitamins and minerals. With its creamy sauce, melted cheese, and tender vegetables, this casserole is sure to be a hit with everyone at your table.
