4 c. herb seasoned stuffing mix (not quite all of a 12-ounce package)
3/4 c. unsalted butter, melted
1 (16 oz.) package frozen broccoli florets
1 (10 3/4 oz.) can cream of mushroom soup
1 (7.5 oz.) tub chive & onion cream cheese
1/4 c. milk
1 egg, lightly beaten
1/8 tsp. salt
1/8 tsp. pepper

Steps:

  • Combine melted butter and stuffing mix; toss with a fork until all stuffing pieces are coated. Set aside.
  • Thaw broccoli and warm in the microwave for about 3 minutes; drain very well. Cut any large florets into smaller, bite-sized pieces.
  • In a mixing bowl, whisk together cream of mushroom soup, chive & onion cream cheese, milk, egg, salt, and pepper. Fold in broccoli.
  • Spoon 2 & 1/2 cups stuffing mixture into the bottom of a greased 9x13-inch baking dish, spreading evenly.
  • Spoon broccoli mixture on top of stuffing layer, spreading evenly. Sprinkle remaining stuffing mixture on top.
  • Bake at 350℉ for 30-35 minutes, until heated through and bubbly around the edges.
  • We use Pepperidge Farm herb-seasoned stuffing mix. Be sure to get regular stuffing mix, NOT cubed.

2 box frozen broccoli, chopped, cooked and drained
1/2 c (1 stick) butter
4 Tbsp all purpose flour
4 chicken bouillon cubes
2 c milk
STUFFING:
1/2 bag(s) pepperidge farm stuffing crumbs
1/2 c boiling water
2 Tbsp butter
1/4 - 1/2 c chopped pecans

Steps:

  • 1. In a medium saucepan, melt the butter. Add the crumbled bouillon cubes and flour. Gradually add milk, stirring over medium-high heat, until thickened.
  • 2. For the stuffing: Place crumbs into a medium bowl. Melt the 2 Tbsp. butter in boiling water and pour over crumbs. Add a few of the nuts and toss with a fork.
  • 3. Place the cooked broccoli in the bottom of a buttered 2-qt. baking dish. Pour the cream sauce over the broccoli and spoon on the stuffing. Sprinkle with more nuts, if desired.
  • 4. Bake, uncovered, in a preheated 350-degree oven for 30 minutes.

1/2 cup butter

6 chicken bouillon cubes
2 cups milk
1/2 cup water

Pepperidge Farm Herb Stuffing (2/3 bag)
2/3 cup walnuts

  • Cook and drain broccoli and place in greased 1 1/2 quart casserole.
