1 lb firm white fish fillet, fresh or thawed frozen (cod, haddock or halibut)
1 can campbells healthy request cream of broccoli soup or 1 can cream of celery soup
1/3 cup skim milk
1/4 cup shredded cheese
2 tablespoons dry breadcrumbs
1 teaspoon margarine, melted
1/8 teaspoon paprika

Steps:

  • Preheat oven to 450 degrees.
  • In 2 quart shallow baking dish, arrange broccoli.
  • Top with fish.
  • In small bowl mix soup and milk and pour over fish.

2 teaspoons cornstarch

1 1/2 lbs fresh broccoli stems or 1 1/2 lbs frozen broccoli stems (18)
6 ounces monterey jack cheese, to taste (1 1/2-inches X 1/2-inch cubes)
2 bls. sole fillets or 2 flounder fillets (6 fillets, Orange Roughy is a favorite of mine)
1/8 teaspoon lemon pepper seasoning (optional)
1/3 cup butter, melted
2 teaspoons lemon juice
1 clove garlic, minced
1/4 teaspoon salt
1/8 teaspoon pepper

Steps:

  • In a saucepan, place broccoli in SMALL amount of water.
  • Bring to a boil.
  • Reduced heat, cover.
  • Simmer for 2-3 minutes or until crisp and tender.
  • Rinse in cold water.
  • Drain.
  • For each bundle place a cheese cube on three broccoli spears.
  • Wrap with fish fillet and fasten with a toothpick if necessary.

2 smoked haddock fillets
1 cod fish fillet
200 g small broccoli florets
3/4 pint milk
100 g cheddar cheese, grated
150 g breadcrumbs
1 1/2 tablespoons cornflour
salt, to taste
pepper, to taste

Steps:

  • Poach the fish in the milk for approximately 15 minutes or until cooked.
  • Remove the fish from the liquid and flake into a baking dish reserving the liquid for the sauce.
