BROCCOLI CORNBREAD CASSEROLE

I was cooking for a vegetarian for a while, and came up with a few recipes that were very much enjoyed. This is one of them. I adapted this recipe from one I found in an old Church cookbook called Blessings. It's one of my favorites, great for lunch or dinner with a salad. It also makes a great bring along recipe, and halves easily too.

This is a favorite when my girlfriends come over for a "hen party". We like it "as is", but it can be made into a complete meal by adding browned ground beef or chicken.

Number Of Ingredients 7

1 box jiffy cornbread mix
1 stick butter or margarine (divided in 1/2)
1 c chopped onion
2 c shredded cheddar cheese
1/3 c milk
4 eggs, slightly beaten
1 (10oz) pkg chopped frozen broccoli

Steps:

  • 1. Preheat oven to 350 degrees. In oven, melt 1/2 stick of butter in a 9x13 baking dish.
  • 2. Melt the other 1/2 stick of butter in a pan or the microwave and mix in with the rest of the ingredients. Pour into baking dish and bake at 350 degrees for 30-35 minutes or until golden brown on top.

Tips:

  • Use fresh or frozen broccoli. If using frozen broccoli, thaw it completely before adding it to the casserole.
  • Use a good quality cornbread mix. A good cornbread mix will make all the difference in the flavor of the casserole.
  • Add some cheese. Cheese is always a good addition to a casserole, and it's especially good in this broccoli cornbread casserole.
  • Season the casserole well. Don't be afraid to add some salt and pepper to taste. You can also add other seasonings, such as garlic powder, onion powder, or paprika.
  • Bake the casserole until it's golden brown. This will ensure that the casserole is cooked through and that the cornbread is crispy.

Conclusion:

Broccoli cornbread casserole is a delicious and easy-to-make dish that's perfect for a weeknight meal. It's also a great way to use up leftover broccoli and cornbread. So next time you're looking for a quick and easy meal, give this broccoli cornbread casserole a try!
