2 lbs. Yukon Gold potatoes* (about 5 gold potatoes), cut into 1 inch cubes = 5 cups
2 tablespoons extra virgin olive oil
sea salt and pepper
15 oz. bag of riced broccoli (about 2 1/2 cups), or about 3 1/2 cups chopped broccoli florets
1 red bell pepper, chopped (optional)
1 teaspoon dried thyme
2-4 tablespoons butter, cut in slices
2 cups shredded sharp cheddar cheese
fresh parsley, for garnish

Steps:

  • Preheat oven to 375°F.
  • In a casserole dish (I used a 9x13), add chopped potatoes. Drizzle with olive oil, salt and pepper and toss to coat with spoon or hands.
  • Add in broccoli and chopped bell pepper, and sprinkle with thyme. Top with slices of butter.
  • Bake at 375°F. for 45-55 minutes, or until potatoes are fork tender. Gently stir potatoes and then top with shredded cheese. Return to oven and bake an additional 10 minutes or until cheese is melted.
  • Top with fresh parsley, if desired. Serve warm!

My mom used to make this easy recipe every Thanksgiving when I was little. We kids could never get enough! It was our very favorite Thanksgiving vegetable. If you have children, or have some coming to visit you as guests this Thanksgiving, I guarantee that they will eat (and enjoy) this veggie dish! Even though I rarely cook with canned condensed soups, I still make this yummy broccoli casserole during the holiday season. It's fabulous with a Christmas ham and potatoes au gratin too. Mmmmmmm!

1 (10.75 ounce) can condensed cream of mushroom soup
1 cup mayonnaise
1 egg, beaten
¼ cup onions, chopped
3 (10 ounce) packages frozen chopped broccoli
8 ounces shredded sharp Cheddar cheese
salt and pepper to taste
1 dash paprika

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Butter a 9x13 inch baking dish.
  • In a medium mixing bowl, whisk together condensed soup, mayonnaise, egg and onions.
  • Place frozen broccoli into a very large mixing bowl. (I like to use my large stainless steel bowl to mix this recipe thoroughly.) Break up the frozen broccoli. Using a rubber spatula, scrape soup-mayonnaise mixture on top of broccoli, and mix well. Sprinkle on cheese, and mix well. Spread mixture into prepared baking dish, and smooth top of casserole. Season with salt, pepper and paprika.
  • Bake for 45 minutes to 1 hour.

2 tablespoons flour

1/8 teaspoon nutmeg
2 cups half-and-half cream
1 -2 tablespoon grated parmesan cheese (optional)
1 (3 ounce) package cream cheese, cubed
1/2 cup grated cheddar cheese (or more if desired) or 1/2 cup swiss cheese (or more if desired)
4 cups frozen hash brown potatoes, thawed
2 -3 cups frozen chopped broccoli, cooked and drained well (or 2-3 cups fresh broccoli, cooked until JUST firm-tender)
1/2 cup fine dry breadcrumb
3 -4 tablespoons grated parmesan cheese
1/4 cup butter, melted

Steps:

  • Set oven to 350°F.
  • Grease an 8-inch square pan (or any size pan that will hold the mixture).
  • In a saucepan over medium-low heat, melt the 2 Tbsp butter; whisk in flour, salt, pepper and nutmeg; whisk and cook for 1 minute, add in the half and half cream; whisk until thickened and bubbly.
  • Add in the Parmesan cheese (if using), cream cheese and the cheddar Or Swiss cheese; stir until the cheese are completely melted.
  • Stir in the hash brown potatoes; mix until combined.

1/2 cup shredded Colby-Monterey Jack cheese blend (2 oz)
2 cups (3/4-inch cubes) deli rotisserie chicken
1 teaspoon parsley flakes

Steps:

  • Heat oven to 400°F. Spray 2 1/2-quart oval baking dish with cooking spray; set aside. Cook frozen broccoli as directed on bag for microwave directions.
  • In 2-quart saucepan, heat water and butter to rapid boiling; remove from heat. Stir in 1/2 cup of the milk and the potatoes (from Chicken Helper box) until well blended. 1 (15 ounce) carton ricotta cheese
1 cup shredded carrot
1/2 cup minced green onion
1 teaspoon dried marjoram
black pepper
vegetable oil cooking spray
5 large potatoes, peeled and thinly sliced (about 2-1/2 pounds)
1 1/2-2 cups mozzarella cheese, shredded
1/2 cup grated parmesan cheese

Steps:

  • Set oven to 375 degrees.
