Steps:
- In large bowl combine first 7 ingredients til very well mixed.
- Place mixture onto a sheet of foil.
- Press out to a flat, even 8"x10" rectangle.
- Top evenly with 6 slices ham to within 1/2" of edges.
- Top with 6 slices american cheese.
- Sprinkle cheese layer with chopped broccoli evenly. Chop any big pieces smaller.
- Roll up starting from long side, lifting and using the foil to help you roll it all up.
- Roll up tightly.
- Pinch ends and seam closed VERY well. Place seam side down onto cookie sheet, or keep on the foil (seam side down)and place onto cookie sheet, that's what I did. Easier clean up!
- Sprinkle with a little coarse ground pepper.
- Bake in 350º oven for 55 minutes.
- Cut remaining 4 slices cheese in half corner to corner. Place on top of meatloaf nicely, overlapping slices slightly, showing pointed sides.
- Bake 5 minutes longer or til cheese is just melted.
- Let rest 15-20 minutes before slicing.
- Good served with mashed potatoes, baby carrots and fresh rolls.
- *Some hams can turn ground beef slightly pink. It is done in 1 hour. Just check juices to see if they are running clear.
- **"Do-ahead" Tip:This can be rolled up and refrigerated (covered)for up to 24 hours before baking.

- Finely roll 12 crackers.
- Mix cracker crumbs, turkey, onion, 2 tbsp chili sauce, parsley and egg.
- Pat meat mixture into 12 by 8 inch rectangle on waxed paper.
- Reserve 2 tablespoons cheese; sprinkle remaining cheese and broccoli onto meat mixture to within 1/2 inch of edge.
- Coarsely break remaining 12 crackers; sprinkle over broccoli, pressing lightly into meat.
- Starting at short end, roll up jelly-roll fashion, using waxed paper to help roll; seal ends.
- Place loaf in 13x9x2-inch baking dish.
- Bake at 350°F for 50-55 minutes.
- During last 5 minutes of baking, spread remaining 2 tbsp chili sauce over meatloaf; sprinkle with reserved cheese.
A-1 BROCCOLI-CHEDDAR MEATLOAF
I found this on an A-1 Steak Sauce bottle about 20 years ago. It called for 8 oz can of stewed tomatoes mixed with remaining A-1 Steak sauce to be put on top but I omit this and just add all of the A-1 into the meatloaf.

- 1. Mix beef with steak sauce, bread crumbs, and onions. On waxed paper, pat to a 12x8 ", top with cheese and broccoli. (Keep a small ball of meat mixture to fix any cracks in the rolled up meat loaf). Roll up from the short end; seal. Transfer to a baking pan with sides. Seal any cracks that happen while transferring to dish. Bake at 350 degrees for 1 hour.
