So a pasta sauce that features it teamed with garlic and chili flakes is a natural. Add bread crumbs for crunch and the dish is a real winner. You can use the same pot for cooking the broccoli and the pasta; you can use the same skillet for toasting the bread crumbs and finishing the dish. The whole thing will be done within 20 or 30 minutes, and it will showcase broccoli rabe beautifully, as it deserves.

1/2 cup extra virgin olive oil, more as needed
3 or 4 cloves of garlic, peeled and slivered
1 cup bread crumbs, preferably homemade
1/4 teaspoon red pepper flakes, or to taste
About 1 pound broccoli rabe, trimmed and washed
1 pound spaghetti, linguine or other long pasta
Freshly ground black pepper
Freshly grated Parmesan cheese

Steps:

  • Bring a large pot of water to a boil and salt it. Put 1/4 cup olive oil in a large skillet over medium-low heat. When oil is warm, cook garlic just until fragrant, 1 to 2 minutes. Add bread crumbs and red pepper flakes and cook until bread crumbs are golden, 5 minutes or so. Remove and set aside.
  • Cook broccoli rabe in boiling water until it is soft, about 5 minutes. Remove with a slotted spoon, drain well and chop. Cook pasta in same pot.
  • Meanwhile, add remaining oil to skillet over medium-low heat. Add broccoli rabe and toss well; sprinkle with salt and pepper. When it is warm add garlic and bread crumbs and mix well.
  • When pasta is done, drain it, reserving a little cooking water. Toss pasta in skillet with broccoli rabe mixture, moistening with a little reserved water if necessary. Adjust seasonings and serve with freshly grated Parmesan.

1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon salt
½ teaspoon baking soda

1 cup low-fat plain yogurt
2 eggs

2 cups fat-free cottage cheese
2 cups broccoli stems, grated

5 to 6 ounces stale baguette or whole wheat country bread, crusts removed, cut into 3/4-inch slices if it isn't too hard to cut (see note)
1 1/2 cups milk (low-fat or regular)
2 large garlic cloves, 1 cut in half, 1 minced
1/2 pound broccoli crowns
1 tablespoon extra virgin olive oil
2 teaspoons fresh thyme or 1 teaspoon dried
4 ounces goat cheese, crumbled (about 1 cup)
4 large eggs
Salt and freshly ground pepper to taste
1 pound ripe, firm tomatoes, sliced (optional)

Steps:

  • Rub the bread slices, front and back, with the cut clove of garlic. Cut into cubes. Place in a bowl and toss with 1 cup of the milk and let sit while you prepare the other ingredients. Note: If the bread is too hard to cut safely, place the whole chunk in a bowl with 1 cup of the milk. Refrigerate for 1 hour or longer, turning the bread in the milk every once in a while. Remove the bowl with the soaked bread from the refrigerator. Break up the bread with your hands. Using a wooden spoon, a whisk or an immersion blender, mash or beat the soaked bread so that the mixture turns into a mush.
  • In a large bowl, beat together the eggs and goat cheese. Beat in the milk. Add salt to taste (about 1/2 teaspoon), a few twists of pepper and the bread, along with any milk remaining in the bowl in which you soaked the bread. Stir well to combine. Let sit for 15 to 30 minutes.
  • Meanwhile, heat the oven to 350 degrees. Rub the sides of a 2-quart baking dish or gratin with the cut side of a garlic clove. Oil or butter the dish. Mince any remaining garlic from the halves you used to rub the bread and the dish. Break up the broccoli crowns into florets and steam for 4 minutes. Remove from the heat, drain and cut the florets into 1/2-inch slices, or chop coarsely.
  • Heat 1 tablespoon of the olive oil over medium heat in a large skillet and add the minced garlic. Cook, stirring, until fragrant, about 30 seconds, and stir in 1 teaspoon of the thyme, the broccoli, and salt and freshly ground pepper to taste. Stir together for a minute, until the broccoli is nicely seasoned, and remove from the heat. Stir into the bread mixture.
  • Scrape the bread mixture into the baking dish. If including tomatoes, scrape in half the bread mixture and layer half the tomatoes on top. Spread the remaining bread mixture over the tomatoes and top with the remaining tomatoes. Season the tomatoes with salt and pepper, sprinkle with the remaining thyme and drizzle on the remaining tablespoon of olive oil. Place in the oven and bake 50 minutes, until puffed, set and lightly browned. Remove from the oven and serve hot or warm.

1/2 medium onion, chopped
1/4 cup melted butter
1/4 cup flour
2 cups half-and-half
2 cups chicken stock or 2 cups bouillon
1/2 lb fresh broccoli
1 cup carrot, julienned
salt and pepper, to taste
1/4 teaspoon nutmeg
8 ounces grated sharp cheddar cheese

Steps:

  • Saute onion in butter. Set aside. Cook melted butter and flour using a whisk over medium heat for 3-5 minutes. Stir constantly and slowly add the half-and-half (this is called making a roux). Add the chicken stock whisking all the time. Simmer for 20 minutes.
  • Add the broccoli, carrots and onions. Cook over low heat until the veggies are tender for 20-25 minutes. Add salt and pepper. The soup should be thickened by now. Pour in batches into blender and puree. Return to pot over low heat and add the grated cheese; stir until well blended. Stir in the nutmeg and serve.

6 tablespoons butter
1 head fresh garlic, peeled and chopped fine

2 cups monterey jack cheese, cut into 1-inch cubes
2 teaspoons lemon pepper (optional)
2 tablespoons chopped fresh parsley

Steps:

  • Set oven to 350°F.
  • Cut the loaf in half lengthwise; tear out the soft center of bread in chunks, don't throw away the chunks of bread, (leaving the crust intact).

  • In a large skillet, melt butter, stir in the garlic and sesame seeds; cook for 1-2 minutes.

  • Remove from the heat.
  • In a food processor, pulse the bread to coarse crumbs.
  • Transfer the crumbs to a small cookie sheet, toss with 1 teaspoon of the olive oil and season lightly with salt and pepper.

  • On a large rimmed baking sheet, toss the broccoli with the remaining 2 tablespoons of olive oil; season with salt and pepper.

  • Gently reheat the butter; very gradually, whisk it into the yolks until a slightly thick sauce forms.

  • Transfer the broccoli to a platter; pour the hollandaise sauce on top.

3 cups coarsely chopped broccoli (about 10 ounces)
1 cup all-purpose flour
1 cup yellow cornmeal
4 teaspoons double-acting baking powder
4 large eggs, beaten lightly
1 cup finely chopped onion
2 cups grated extra-sharp Cheddar
1 stick (1/2 cup) unsalted butter, cut into bits

Steps:

  • In a large saucepan of boiling salted water blanch the broccoli for 2 minutes, drain it well, and pat it dry between several thicknesses of paper towels. In a bowl whisk together the flour, the cornmeal, the baking powder, and salt and pepper to taste, add the eggs, and whisk the mixture until it is just combined. (The batter will be very thick.) Stir in the onion, the broccoli, and the Cheddar. In a 9-inch square baking pan heat the butter in a preheated 400°F. oven until it is hot but not smoking, spoon the batter into the pan, spreading it evenly, and bake the corn bread in the middle of the oven for 25 to 30 minutes, or until the tester comes out clean. Serve the corn bread as an accompaniment to soup.

This is a recipe my mother in law got from a group she emails with that has evolved over time to this. I think it is an adultrated form of the chicken broccoli braid recipe from Pampered Chef, so i hope I'm not infringing :) Anyway, you can pretty much season it anyway you like. Enjoy!

16 ounces crescent roll dough
2 boneless skinless chicken breasts
2 medium bell peppers (one red and one yellow or orange)
1 cup chopped broccoli
1 cup shredded cheddar cheese
1 1/2 cups Miracle Whip
1 teaspoon salt
1 teaspoon pepper
1/2 teaspoon red pepper
1/2 teaspoon celery salt
1/2 teaspoon chili powder
1/2 teaspoon parsley
1/2 teaspoon garlic powder
1/2 teaspoon onion powder

Steps:

  • Cook and shred chicken breast. You can boil it in water with a tablespoon of garlic, pepper and salt or cook it in a skillet with garlic and butter. However it gets cooked, I generally season mine during the process. Place shredded chicken in fridge to cool.
  • Preheat oven to degree indicated on prepackaged rolls.
  • In a large bowl mix all the spices into mayonnaise and chill in fridge.
  • Chop bell peppers and broccoli into small pieces.
  • Mix cool chicken, bell peppers, broccoli and cheese into the mayo mixture.
  • On a cookie sheet, roll out dough. It comes out of the can as a rectangle; do not separate the rolls from each other. I use my fingers to gently push the perforated lines back together.
  • Use both cans together to make one large rectangle, a single sheet of dough.
  • Using a knife or scissors, cut 1 inch wide strips in towards the center, starting on the long sides. There should be a solid strip of uncut dough down the center, with the cut strips forming a fringe down each side. Make sure to keep an even number.
  • Spread the chicken mixture along the center strip.
  • Fold the short ends of the dough up over the edge of the mound.
  • Now bring each strip, and its partner on the other side, up to meet on top of the chicken mixture mound.
  • Pinch the ends together and fold down.
  • Continue until you have a pretty loaf.
  • Brush dough with the egg white and bake in the preheated oven 25-30 minutes.
  • Don't undercook or its soggy, its pretty wet bread.

  • Trim broccoli, reserving stems for another use, and cut flowerets into 1-inch pieces. (There should be about 5 cups.)
  • Trim cauliflower and cut flowerets into 1-inch pieces. (There should be about 5 cups.)
  • In a large saucepan of boiling salted water cook vegetables until crisp-tender, 3 to 5 minutes. In a colander drain vegetables and refresh under cold water to stop cooking. Drain vegetables well. Vegetables may be prepared up to this point 1 day ahead and chilled, covered.
  • In a large heavy skillet heat oil and 2 tablespoons butter over moderately high heat until foam begins to subside and sauté bread crumbs, stirring, until golden. Stir in horseradish and salt to taste and sauté, stirring, until crisp. Bread crumbs may be prepared 3 days ahead and kept in an airtight container.
  • Preheat oven to 350°F.
  • In skillet melt remaining tablespoon butter over moderate heat and in it toss vegetables with salt and pepper to taste. Sprinkle vegetables with bread crumbs and toss to combine. Transfer mixture to a baking dish and bake, uncovered, 10 minutes, or until just heated through.

1 lb. favorite spaghetti
Fresh Romano or Parmesan cheese for grating
Approximately 1/4 - 1/2 loaf of hard Italian bread - cubed
2 cloves of garlic

1/4 tsp. red pepper flakes
1/4 tsp. black pepper
1/4 tsp. paprika
1 inch piece of fresh Romano or Parmesan cheese
2 tablespoons olive oil

Steps:

  • Bring a large pot of salted water with a wedge or two of lemon to a boil. Add the broccoli rabe to simmer for about five minutes; until the stems become tender. Drain the water and set aside the broccoli rabe. Heat a large frying pan with the olive oil; add the chopped garlic, wedge of lemon, red pepper flakes, salt and black pepper and the broccoli rabe and sauté on low while preparing the spaghetti; do not burn the garlic. Add the cup of chicken broth to the pan and simmer on low. Prepare the spaghetti as directed. In a food processor add the cubed bread and all of the other ingredients. Process until bread crumbs are formed. Heat a large frying pan with the olive oil and add the bread crumbs to get a slight golden color and crispness. In a serving platter drizzle a little olive oil. Add the spaghetti and toss. Top with the broccoli rabe and the fresh the bread crumbs and toss. Grate the fresh Romano or Parmesan and add dashes of red pepper flakes. Toss with fresh lemon wedges.

  • 1. Bring a large pot of water to a boil and salt it. Put 1/4 cup olive oil in a large skillet over medium-low heat. When oil is warm, cook garlic just until fragrant, 1 to 2 minutes.
