5 cups vegetable oil for frying
1 (16 ounce) package chopped frozen broccoli, thawed and drained
4 cups shredded sharp Cheddar cheese
3 ½ cups dry bread crumbs
salt and pepper to taste

Steps:

  • Heat oil in deep-fryer to 375 degrees F (190 degrees C).
  • Place broccoli in a medium saucepan with 1 cup boiling water. Return to a boil. Cook covered until firm but tender, about 5 minutes.
  • In a medium saucepan over low heat, melt the Cheddar cheese. Mix in the broccoli. Allow the mixture to cool and thicken approximately 15 minutes.
  • In a medium bowl, mix the bread crumbs, salt and pepper. Spread the mixture onto a large piece of wax paper.
  • Form the broccoli cheese mixture into balls and roll in the bread crumb mixture until thoroughly coated.

  • Chop and boil the broccoli until soft. Strain.
  • Add one egg, the onion, feta, salt and pepper, HALF the breadcrumbs and HALF the flour until a thick, dough-like consistency forms.
  • Scoop into balls and refrigerate for 30 minutes.

1 large broccoli head
1/2 cup breadcrumbs
1/2 cup grated cheddar cheese
1 egg
1 spring onion
black pepper to taste
oil to grease the baking tray

Steps:

  • Break the broccoli head into florets, add them to a pan of boiling water, cover with a lid and leave to cook for 5-7 minutes until tender.
  • Chop the broccoli finely, you should get about 2 cups of chopped broccoli. Leave to cool.
  • Add the broccoli to a bowl, add the cheese, chopped spring onion, breadcrumbs, egg and black pepper, and mix everything well.

3 tablespoons prepared Dijon-style mustard
4 tablespoons honey
2 cups broccoli florets
1 cup shredded Cheddar cheese
1 egg
1 cup milk
½ cup sifted all-purpose flour
½ teaspoon baking powder
½ teaspoon salt
½ teaspoon vegetable oil
½ cup vegetable oil for frying

Steps:

  • To make the sauce: In a small bowl, stir together the mustard and honey. Set aside.
  • Chop florets into small pieces or pulse lightly in food processor. Toss in a mixing bowl with shredded cheese. Set aside.
