1 good cooking apple (a non-tart apple such as Jonagold, golden delicious, McIntosh), peeled, cored, chopped
3 cups chicken stock
1 cup unfiltered apple juice or apple cider (not hard cider)
4 sprigs lemon thyme or thyme
2 long strips lemon zest
1 tablespoon fresh chives, chopped, for garnish

1 Tbsp olive oil, extra virgin
2 c broccoli fresh stalks peeled and diced
3/4 tsp dried thyme crushed
1 medium onion thinly sliced
1 large red apple (cooking type) peeled and diced
1/2 c celery stalks diced
1/4 tsp white pepper
1/4 c yogurt, plain
2 Tbsp parsley minced
1 1/2 c cooked rice

  • 1. Heat oil in a large pot with lid. Add broccoli, thyme, onion, apple and celery

1 cup rice, medley
2 large carrots, diced
1 onion, diced
1 large garlic clove, minced
2 large head broccoli, cut into small pieces
1 tablespoon oil
1 tablespoon butter
8 cups vegetable stock

  • Cook rice medley as per package directions until just done.
  • About 30 minutes.
  • Do not drain.
  • In a large soup pot, on medium heat, melt butter with oil.
