BROCCOLI ALMOND CASSEROLE

Broccoli Almond Casserole image

This is a family favorite that MUST be at every kind of 'roast' something dinner. It is very rich tasting and what we all consider comfort food. I'm not sure where this originated from, just very thankful to have it. You can use 7oz cheez whiz in place of the shredded cheddar, but I don't like it as much. You can also omit the cheese entirely if you want. I once did that by accident and it tasted just fine.

Time 55m

Yield 4-6 serving(s)

Number Of Ingredients 10

1/2 cup butter, divided
1 minced garlic clove
1 large white onion, finely chopped
4 cups broccoli florets
1 (10 ounce) can condensed cream of mushroom soup
2 cups shredded cheddar cheese
1 cup mushroom, chopped
1/2 cup milk or 1/2 cup water
1/2 cup sliced almonds, divided
4 slices day old bread, torn into pieces

Steps:

  • Cook broccoli until tender. Drain.
  • Melt 1/4 c butter in medium saucepan and saute onions and garlic in the butter. Add the mushrooms, 1/4 c sliced almonds, soup and cheese. Stir until hot and cheese is melted.
  • In a large casserole dish stir together the broccoli and soup mixture.
  • Melt remaining 1/4 c butter and toss with the bread pieces and remaining 1/4 c sliced almonds. Top the casserole with this mixture.
  • Bake at 350 for 30 minute.

Tips:

  • Choose fresh and vibrant broccoli florets: The quality of your broccoli will greatly impact the final dish. Look for broccoli with tightly closed florets and a deep green color.
  • Cook the broccoli properly: Overcooked broccoli can be mushy and unappetizing. To retain its vibrant color and texture, steam or blanch the broccoli for a few minutes until tender-crisp.
  • Use high-quality cheese: The type of cheese you use will significantly influence the flavor of the casserole. Opt for a sharp cheddar or a combination of cheeses for a richer taste.
  • Don't overmix the casserole: Overmixing can result in a dense and rubbery texture. Gently fold the ingredients until just combined to maintain a light and fluffy texture.
  • Bake until golden brown: The casserole should be baked until the top is golden brown and bubbly. This indicates that the casserole is cooked through and the cheese is melted and gooey.

Conclusion:

Broccoli almond casserole is a delightful and versatile dish that can be enjoyed for breakfast, lunch, or dinner. Its creamy texture, cheesy flavor, and crunchy almond topping make it a crowd-pleaser. The addition of broccoli provides a healthy twist, making it a nutritious and satisfying meal. With its ease of preparation and customizable ingredients, this casserole is a perfect choice for any occasion.
