Yield 6

Number Of Ingredients 17

½ gallon water
½ cup salt
½ cup dark brown sugar
1 orange, zested and juiced
1 lemon, zested and juiced
1 lime, zested and juiced
½ bunch cilantro, chopped
6 cloves garlic, smashed
2 sprigs fresh rosemary, chopped
2 sprigs thyme
4 bay leaves
1 tablespoon whole black peppercorns
1 tablespoon fennel seeds
1 tablespoon coriander seed
1 ½ teaspoons whole cloves
2 (1 1/4 pound) pork tenderloins, trimmed and halved lengthwise
1 tablespoon vegetable oil

Steps:

  • Warm water in a large pot over high heat. Add salt and stir to dissolve. Stir in brown sugar, orange, lemon, lime, cilantro, garlic, rosemary, thyme, bay leaves, peppercorns, fennel, coriander, and cloves. Bring to a boil, reduce heat to low, and cover. Let brine simmer for 20 minutes.
  • Fill a sink with ice water. Remove brine from heat and place pot into the sink. Cool, stirring, until brine reaches room temperature. Pour into a large plastic or glass vessel such as a 12-quart Cambro®. Add pork tenderloin pieces. Cover and let soak 6 hours to overnight.
  • Remove loins from brine and rinse. Let rest at room temperature for 30 to 45 minutes while you prep the grill. Preheat the grill for indirect heat at 275 degrees F (135 degrees C).
  • Place loins on cooler side of the grill and cook, rotating every 20 to 30 minutes, until an instant-read thermometer inserted into the centers read 130 to 135 degrees F (54 to 57 degrees C), 35 to 40 minutes.
  • Paint loins with vegetable oil and move over the direct heat side of the grill. Sear until golden brown all over and internal temperature just reaches 145 degrees F (63 degrees C), about 2 minutes per side.
  • Remove loins from heat, place on a serving dish, and tent with foil. Let rest for about 5 minutes. Slice into 1/2- to 1-inch-thick medallions.

  • To prepare brine, place 2 teaspoons tea leaves on a double layer of cheesecloth. Gather edges of the cheesecloth together, and tie securely. Combine 3 cups apple juice and next 5 ingredients (through bay leaf) in a large saucepan, and bring to a boil. Cook for 1 minute, and remove from heat. Add cheesecloth bag; cover and steep 5 minutes. Discard cheesecloth bag. Add 3 cups water, and cool to room temperature. Pour liquid into a large heavy-duty zip-top plastic bag. Remove from heat. Stir in 2 teaspoons tea leaves, and steep for 2 minutes. Strain juice mixture through a sieve into a bowl; discard solids. Reserve juice mixture. Heat butter and 1 teaspoon oil in pan over medium-low heat. Add onion; cook for 20 minutes or until golden brown, stirring frequently. Stir in apple; cook 5 minutes. Add reserved juice mixture, raisins, and next 8 ingredients (through ground cloves). Bring mixture to a boil over medium-high heat; reduce heat to medium. Cook 30 minutes or until apple is tender and mixture is thick. Remove from heat. Preheat oven to 350°. Remove pork from bag; discard brine. Pat pork dry with paper towels. Brush pork with 1 teaspoon oil; sprinkle on all sides with 1/2 teaspoon white peppercorns and 1/2 teaspoon black peppercorns. Place pork on a broiler pan coated with cooking spray. Bake at 350° for 40 minutes or until a thermometer registers 160° (slightly pink). Place pork on a platter, and let stand for 5 minutes. Cut pork across the grain into thin slices. Serve with chutney.

  • Choose a pork tenderloin that is about 1 pound in weight. You can brine it whole or cut it into medallions.
  • To make the brine, dissolve 1/4 cup of salt and 1/4 cup of sugar in 4 cups of cold water. You can also add herbs, spices, or citrus zest to the brine for extra flavor.
  • Place the pork tenderloin in the brine and refrigerate for at least 4 hours, or overnight.
  • When you're ready to cook the pork tenderloin, remove it from the brine and pat it dry.
  • Sear the pork tenderloin in a hot skillet over medium-high heat until it is browned on all sides.
  • Reduce the heat to medium-low and cook the pork tenderloin for 10-12 minutes, or until it reaches an internal temperature of 145 degrees Fahrenheit.
  • Let the pork tenderloin rest for 5 minutes before slicing and serving.

Conclusion:

Brining pork tenderloin is a great way to add flavor and moisture to the meat. This simple technique can be used with a variety of brines, so you can customize the flavor of the pork to your liking. Whether you're grilling, roasting, or pan-searing the pork tenderloin, brining will help ensure that it comes out juicy and delicious.
