125 g brie cheese or 125 g camembert cheese, round
1 sheet frozen puff pastry

Steps:

  • Place brie on the pastry, draw a circle round it with a knife (about 1/2 inch larger than the cheese) and cut out the circle.
  • Do the same again.
  • Cut a strip of pastry about 1/2" wide that's long enough to wrap around the brie.
  • Place the brie on one circle of pastry and tuck the sides up, place another circle on top of the brie and tuck the sides down, then wrap the pastry strip round it to tidy it all up.
  • You can press the edges down with a fork if you want it to look REALLY neat, then decorate it with pastry scraps cut into nice shapes.
  • Brush it over with a beaten egg so it will have a nice glaze when cooked.
  • Bake at 180 degrees for around 20-25 minutes.
  • Let it settle for around 20-30 mins then cut into thin wedges and serve.

1 (8 ounce) wheel Brie cheese
¼ cup sliced almonds

1 sheet frozen puff pastry, thawed

  • Preheat oven to 400°. Cut Brie horizontally in half. Sprinkle bottom half with blue cheese; replace top., On a lightly floured surface, roll pastry into a 14-in. square. generous wedge brie cheese (sometimes, I buy those very small rounds of brie or camembert and serve one or half per person) or camembert cheese, for each person you're planning to serve (sometimes, I buy those very small rounds of brie or camembert and serve one or half per person)
milk
flour
1 egg (or 2 or 3 - again depending on how many people you're serving this to)
plain breadcrumbs
butter
lettuce leaf, chiffonade (lettuce cut in thin, strips to make an attractive plating)
fruit chutney or preserves
crusty bread

Steps:

  • Dip the wedge of brie or camembert in milk and dredge in flour.
  • Then dip in egg and breadcrumbs.
  • Let cheese'sit' for 10-15 minutes to allow coating to set.
  • Melt butter in a large skillet.
  • When hot, add as many brie/camembert slices as will fit without crowding.
  • Fry until golden-brown, turn over carefully and fry on other side.
  • Put a handful of the lettuce chiffonade on each serving plate.
  • Centre a golden brie/camembert slice on the plate.
  • Top with a spoonful of fruit chutney or preserves (or serve the chutney on the side); Cranberry Sauce is WONDERFUL with this!
  • Serve immediately with plenty of crusty bread to spread the molten cheese on.
