Nonstick cooking spray, for the baking dish
3 ounces pancetta, chopped
8 ounces rigatoni
3 tablespoons unsalted butter
1/2 small onion, finely chopped
Kosher salt and freshly ground black pepper
1/4 teaspoon ground nutmeg
1/4 teaspoon sweet paprika
1/4 teaspoon cayenne pepper
1/8 teaspoon ground allspice
1/4 cup all-purpose flour
3 cups whole milk
4 ounces Brie, rind removed and finely chopped
4 ounces Gruyere, shredded
1/2 cup walnuts, toasted and coarsely chopped
3 tablespoons shredded Parmesan

Steps:

  • Preheat the oven to 375 degrees F. Grease an 8-inch square baking dish.
  • Cook the pancetta in a small skillet until crispy, about 10 minutes. Set aside.
  • Cook the pasta according to the package directions, reducing the cooking time by 1 minute. Drain and set aside.
  • In a large saucepan, melt the butter over medium heat. Add the onion and a pinch of salt. Cook, stirring, until the onion is soft and translucent, 5 to 7 minutes. Stir in the nutmeg, paprika, cayenne, allspice and a few turns of pepper and cook for 2 minutes more. Increase the heat to medium-high and add the flour, whisking until combined, then cook for 1 minute. Add half the milk, whisking continuously, until thickened, about 5 minutes, then repeat with the other half of the milk. Add the Brie, Gruyere and pancetta and stir until the cheese is melted. Remove from the heat and add the pasta.
  • Pour the mixture into the baking dish and top it with the walnuts and Parmesan. Bake until the top is browned, about 25 minutes. Cool for 5 minutes and enjoy!

A light, flavoursome and highly individual pasta dish which includes pear (or apple) and walnuts among its ingredients. Makes a great stand alone dish, or it could be served as a side dish for four. Adapted from a recipe from Australian chef flip shelton's 'green: modern vegetarian recipes'.

Time 20m

Yield 2 serving(s)

Number Of Ingredients 9

200 g spaghetti
200 g baby spinach leaves, washed well and roughly chopped
50 g gorgonzola (I don't like either of these, so I used 1 tablespoon parmesan and 2 tablespoons Greek yoghurt) or 50 g blue cheese (I don't like either of these, so I used 1 tablespoon parmesan and 2 tablespoons Greek yoghurt)
1/2 ripe pears, peeled, cored and very thinly sliced or 1 granny smith apple, cored and very thinly sliced
1/2 teaspoon dried thyme
1/2 teaspoon dried sage
1/2 cup walnuts, shelled, roughly chopped
1 teaspoon lemon juice
fresh ground black pepper, to taste

Steps:

  • Three quarters fill a large pot with water, bring to the boil, add the spaghetti and cook till al dente (about 8 minutes).
  • Drain the spaghetti being careful to RESERVE SOME OF THE COOKING WATER.
  • Return the hot spaghetti to the pot and, over a low heat, add the baby spinach leaves and cheese and stir until the baby spinach leaves wilt and the cheese starts to melt; add a little of the pasta water and continue to stir. (When I made this using yoghurt instead of cheese, I added very little water; judge how much water to use by the consistency).
  • Add the pear (or apple), walnuts, thyme and sage, stir well, and allow to warm through.
  • Drizzle with lemon juice, season to taste with freshly ground black pepper and serve hot.
  • Notes: For a smoother sauce, in a small pan, over a very low heat, melt the cheese with some of the pasta water and stir in the pear (or apple); then stir in the spaghetti and baby spinach leaves, until they are well coated; then add the lemon juice and gently fold in the walnuts, thyme and sage.

Tips:

  • Use a good quality Brie cheese for the best flavor. A ripe Brie will have a creamy, slightly runny texture.
  • If you don't have walnuts, you can substitute another type of nut, such as pecans or almonds.
  • To make the sauce, you can use a food processor or a blender. If you use a blender, be sure to blend until the sauce is smooth.
  • If you don't have white wine, you can use chicken broth or vegetable broth.
  • Be careful not to overcook the spaghetti. It should be cooked al dente, or slightly firm to the bite.
  • Serve the spaghetti immediately, topped with the Brie sauce, walnuts, and fresh parsley.

Conclusion:

This Brie and Walnut Spaghetti is a delicious and easy-to-make dish that is perfect for a weeknight dinner. The combination of creamy Brie cheese, crunchy walnuts, and fresh parsley is sure to please everyone at the table. So next time you're looking for a quick and tasty meal, give this recipe a try.
