HOMEMADE BRATWURST BITES WITH BEER AND HORSERADISH MUSTARD

Homemade Bratwurst Bites with Beer and Horseradish Mustard image

If you have a food processor, you can make sausage from scratch. Adding pork fat to the meat gives these bite-size sausage patties a tender texture. Call your butcher in advance to make sure he sets aside some extra pork fat for you. To help the mixture blend more easily, be sure to freeze the pork pieces before grinding them in the processor. Keep in mind that the sausage needs to chill overnight so that the flavors have time to develop.

BALLPARK MUSTARD

Provided by Food Network

Categories     condiment

Yield 4 servings

Number Of Ingredients 5

1/2 -cup mustard powder
6 Tbs. pickle vinegar (juice that's in a jar of dill pickles)
Gray salt
freshly-ground black pepper
1 Tbs. Napastyle Roasted Garlic Paste (optional)

Steps:

  • Whisk together mustard powder and pickle vinegar until smooth. Let the mixture sit for 10 minutes so flavors have time to develop. Season to taste with salt and pepper. Stir in roasted garlic paste. Transfer to a jar and refrigerate.

Tips:

  • Use a good quality beer, preferably a dark ale or stout, to give the mustard a rich, malty flavor.
  • If you don't have whole grain mustard seeds, you can use ground mustard powder instead. Just add it to the vinegar mixture along with the other ingredients.
  • You can adjust the heat of the mustard by adding more or less cayenne pepper. If you like a really spicy mustard, you can also add a pinch of ground cloves or black pepper.
  • The mustard will thicken as it sits, so if you want a thinner consistency, you can add a little more vinegar.
  • Store the mustard in a clean glass jar in the refrigerator for up to 2 months.

Conclusion:

Brewhouse beer mustard is a delicious and versatile condiment that can be used on everything from sandwiches and burgers to hot dogs and pretzels. It's also a great addition to dressings, marinades, and glazes. So next time you're looking for a new mustard to try, give this recipe a shot. You won't be disappointed!
