CROCK POT TURKEY (A WHOLE TURKEY)

Crock Pot Turkey (A whole turkey) image

Not long ago when I was up at the Sunflower market, I treated myself to a piece of crock pot turkey. It was love at first bite! It was tender, juicy and fell apart like butter in my mouth!!! I have decided this Thanksgiving this is how I'm doing my turkey. The trick is to know how big a turkey to fit in your crock pot. You can...

Time 8h20m

Number Of Ingredients 8

turkey or vegetable stock
1-9.5 lb. turkey, fresh is best
olive oil
potatoes
carrots
celery
onions
dry rub or mixed herbs (see below)

Steps:

  • 1. REMEMBER: DO STEPS 2 OR 3 24 HOURS AHEAD OF TIME TO ENSURE GOOD FLAVOUR!!! AND REMEMBER TO START EARLY IN THE MORNING ON HIGH IF IT'S A BIG BIRD. CHECK THE TEMPERATURE PERIODICALLY WITH A MEAT THERMOMETER. 180'F IS YOUR GOAL TEMPERATURE. IF THIS IS DONE FASTER THEN ANTICIPATED JUST PUT ON LOW OR BUFFET SETTING IF YOU HAVE ONE.
  • 2. Once you have washed and patted dry your turkey rub it all over with Olive Oil, then coat with your favourite dry rub. Salt and pepper the whole bird too.
  • 3. If you prefer to use just herbs using sage, thyme and marjoram is recommened. I'd even throw in a little rosemary to the mix because I like it.
  • 4. Once the bird has sat for a day in the fridge with the dry rub or herbs on it you're ready to start to cook the bird, first start with the veggies...
  • 5. Cut them up in good size chunks other wise they might dissintegrate on you. Lightly toss the veggies in olive oil and season with salt and pepper. Put in the bottom of the crock pot.
  • 6. Pour the stock into the crock pot, but use only a small amount, it's just for steam, not to boil the turkey. Place the turkey on top of the veggies and stock. If you have more veggies then can fit under the turkey slide them along side the turkey.
  • 7. Basting isn't necessary, it should baste itself, but if you open the lid a lot it might not baste properly, so hand baste if you like to peek a lot. You can also baste it with some whole cream or egg white to crisp the skin.
  • 8. When it hits 180'F it's done. When serving, be careful. Chances are the bird will be very tender and the meat will fall off the bones. You might want to take the wings, legs etc. off and display them on a nice platter. If you wish serve the cooked veggies along side in a nice dish. You can also add some greens around the edge of the platter under the turkey for presentation.
  • 9. If you have any juice left in the bottom use it to make gravy, it will be delicious.
  • 10. Enjoy!

SLOW COOKER TURKEY BREAST WITH DRESSING

Slow Cooker Turkey Breast With Dressing image

My cranky old 1934 oven is very small and slow, so I devised this method of cooking holiday meals. The slow cooker keeps the turkey breast moist, and cooking the dressing in the same cooker gives it a wonderful flavor.

Categories     Meat and Poultry Recipes     Turkey     Breasts

Time 4h30m

Yield 12

Number Of Ingredients 10

2 tablespoons butter
1 ½ large yellow onions, diced
4 large celery ribs, diced - or more to taste
1 (8 ounce) package dry bread stuffing mix with seasoning packet
1 (16 ounce) can whole berry cranberry sauce
½ cup butter, melted
½ cup chicken broth
½ teaspoon salt
1 (7 pound) bone-in turkey breast with pop-up timer
½ teaspoon salt

Steps:

  • Melt 2 tablespoons butter in a large skillet over medium heat. Cook and stir onions and celery in the hot butter until onions are translucent, about 8 minutes; remove from heat.
  • Place a plastic slow cooker liner into a 6-quart slow cooker. Place dry bread stuffing into the liner bag and sprinkle contents of seasoning packet over the bread. Stir cooked onions and celery, cranberry sauce, 1/2 cup melted butter, chicken broth, and 1/2 teaspoon salt into the dressing mix, taking care not to pierce the bag.
  • Rinse turkey breast and pat dry with paper towels; season turkey breast with 1/2 teaspoon salt. Push the dressing mixture to the edge of the cooker and lay the turkey breast into the slow cooker with the pop-up timer facing upward.
  • Cook on High until the pop-up timer in the turkey breast pops, 4 to 4 1/2 hours. Transfer turkey breast to a cutting board and let stand for 10 minutes before serving. Transfer dressing to a serving bowl and serve alongside turkey.

BRINED SLOW-COOKED TURKEY BREAST

Brined Slow-Cooked Turkey Breast image

Why brine? Brining seasons the turkey without making it salty. It also helps draw moisture into the meat for a juicier result. Serve with grilled vegetables or Corn-and-Zucchini Saute with Basil.

Time 1h30m

Number Of Ingredients 3

1 1/4 cups coarse salt
1 cup packed light-brown sugar
1 whole turkey breast (5 to 6 pounds), thawed if frozen

Steps:

  • In a large stockpot, dissolve salt and sugar in 1 gallon cool water. Place turkey, bone side up, in brine and weight it with a plate. Refrigerate 6 to 8 hours. Rinse turkey thoroughly under cool water and pat dry with paper towels.
  • Set up grill for indirect cooking. Place turkey on grill, away from hot coals; cover, keeping vent holes open over meat. Grill until cooked through, or an instant-read thermometer inserted in thickest part of turkey registers 165 degrees, about 1 1/2 hours (if using a charcoal grill, add a couple handfuls of charcoal every half hour to maintain heat). Let rest 10 minutes before slicing.

BRINED AND ROASTED WHOLE TURKEY

Brined and Roasted Whole Turkey image

No dish has more riding on its success than the holiday turkey. Brining locks in a turkey's natural juices, so it won't dry out during the roasting process, ensuring the perfect centerpiece for a flavorful feast.

Provided by Morton

Categories     Trusted Brands: Recipes and Tips

Time 13h20m

Yield 10

Number Of Ingredients 8

1 cup Morton® Coarse Kosher Salt
1 cup sugar
2 gallons cool water
1 (12 pound) fresh, whole, bone-in skin-on turkey, rinsed and patted dry
5 tablespoons unsalted butter, softened
½ teaspoon ground black pepper
3 tablespoons unsalted butter, melted
1 cup white wine, chicken broth or water

Steps:

  • Overnight Brine: Combine Morton®Kosher Salt and sugar in cool water in a large, clean stockpot until completely dissolved. Place the whole turkey in the brine until completely submerged. Cover and refrigerate overnight, up to 14 hours. Remove the turkey from the brine, rinse inside and out under cool running water for several minutes to remove all traces of salt; pat dry with paper towel.
  • 4-5 hour Brine: To brine your turkey in less time (4-5 hours), use 2 cups of Morton®Coarse Kosher Salt and two cups of sugar. Cover and refrigerate for 4 to 5 hours.
  • To Roast: Mix the softened butter with the pepper. Place turkey on rack in roasting pan. Rub the seasoned butter under the skin. Brush the skin with the melted butter. Pour the 1 cup liquid (wine, broth or water) over the pan bottom to prevent drippings from burning. Roast turkey at 450 degrees F for 25 minutes, baste and then rotate the roasting pan. Continue roasting until the skin turns golden brown, an additional 25 minutes; baste again. Reduce oven temperature to 325 degrees F; continue to roast, basting and rotating the pan once about halfway through cooking, until the minimum internal temperature reaches 165 degrees F. Remove the turkey from the oven. Let stand 20 minutes before carving.

BRINED WHOLE TURKEY

Brined Whole Turkey image

When was the last time you truly enjoyed your holiday turkey? If it's been a while, we suggest you give your regular recipe a rest and try out this whole turkey instead. As you might have noticed (from its 100-plus, five-star ratings), it's been helping home cooks master succulent and tender-to-the-bone turkeys for decades now. And its success is nearly guaranteed-a bold promise, yes, but we'll stand behind it. The reason this recipe turns out time after time is because it uses the brining technique. Brining, in this case, wet brining, involves soaking the bird in a simple solution of salt and water for an extended period of time (8 to 12 hours) prior to roasting. The soak breaks down tough muscle tissue and infuses the meat with flavor. So when we say you don't have to suffer lackluster turkey again, it's not a false promise, all you have to do is make this fan-favorite recipe. Our guess is that you'll never go back to your old standard.

Time 12h30m

Yield 14

Number Of Ingredients 8

2 gallons cold water
2 cups kosher salt or 1 cup table salt
1 whole turkey, not prebasted (12 to 14 pounds), thawed if frozen
1 medium onion, cut into fourths
1 medium carrot, coarsely chopped
1 medium celery stalk, coarsely chopped
1 teaspoon dried thyme leaves
3 tablespoons unsalted butter, melted

Steps:

  • Mix cold water and salt in a large clean bucket or stockpot (noncorrosive); stir until salt is dissolved. Add turkey. Cover and refrigerate 8 to 12 hours.
  • Heat oven to 325°F. Remove turkey from brine; discard brine. Thoroughly rinse turkey under cool running water, gently rubbing outside and inside of turkey to release salt. Pat skin and both interior cavities dry with paper towels.
  • Fasten neck skin to back of turkey with skewer. Fold wings across back of turkey so tips are touching. Toss onion, carrot, celery and thyme with 1 tablespoon of the melted butter; place in turkey cavity.
  • Place turkey, breast side down, on rack in large shallow roasting pan. Brush entire back side of turkey with 1 tablespoon melted butter. Turn turkey over. Brush entire breast side of turkey with remaining 1 tablespoon melted butter. Insert ovenproof meat thermometer so tip is in thickest part of inside thigh and does not touch bone. (Do not add water or cover turkey.)
  • Roast uncovered 3 hours 30 minutes to 4 hours, brushing twice with pan drippings during last 30 minutes of roasting.
  • Turkey is done when thermometer reads 165°F and drumsticks move easily when lifted or twisted. If a meat thermometer is not used, begin testing for doneness after about 3 hours. When turkey is done, place on warm platter and cover with aluminum foil to keep warm. Let stand about 15 minutes for easiest carving.

Tips:

  • Select a high-quality turkey: Opt for a fresh or frozen turkey that is free of bruises or tears. Avoid turkeys that have been injected with a solution.
  • Thaw the turkey properly: If using a frozen turkey, thaw it in the refrigerator for 4-5 days or in a cold water bath for 30 minutes per pound. Never thaw a turkey at room temperature.
  • Generously season the turkey: Use a combination of herbs, spices, and seasonings to enhance the flavor of the turkey. Common seasonings include salt, pepper, garlic, onion, rosemary, thyme, and sage.
  • Add vegetables and aromatics to the crock pot: Along with the turkey, include vegetables like carrots, celery, and onions to add flavor and moisture to the dish. You can also add aromatics like bay leaves and cloves for extra depth of flavor.
  • Cook the turkey on low heat: Slow cooking helps to keep the turkey moist and tender. Cook the turkey on low heat for 8-10 hours or until the internal temperature reaches 165°F (74°C).
  • Let the turkey rest before carving: Once the turkey is cooked, let it rest for 15-20 minutes before carving. This allows the juices to redistribute throughout the meat, resulting in a more tender and flavorful turkey.

Conclusion:

Brendan's crock-pot turkey is an easy and flavorful way to cook a Thanksgiving turkey. By following these tips and using high-quality ingredients, you can create a delicious and memorable meal for your family and friends. The slow cooking process ensures that the turkey is moist and tender, while the combination of herbs, spices, and vegetables adds a rich and complex flavor.
