Yield 4

Number Of Ingredients 13

4 medium fresh poblano peppers
1 tablespoon olive oil
1 medium onion, diced
1 clove garlic, minced
1 pound lean ground beef
1 tablespoon chili powder
1 teaspoon ground cumin
salt and ground black pepper to taste
4 thin slices shredded Cheddar cheese
slice shredded Monterey Jack cheese
1 (15 ounce) can enchilada sauce (such as Hatch®)
aluminum foil
¼ cup grated Cheddar cheese

Steps:

  • Turn a gas stove burner to high. Hold poblano peppers directly on the flame with a pair of tongs and turn until skins are charred. Let peppers cool. Leaving peppers as close to whole as possible, remove skins, seeds, membranes, and stems.
  • Heat olive oil in a large skillet over medium heat; stir in onion and garlic. Cook and stir until onion is soft and translucent, about 5 minutes. Add ground beef; cook and stir beef in the hot skillet until browned and crumbly, 5 to 7 minutes. Mix in chili pepper, cumin, salt, and pepper.
  • Preheat the oven to 350 degrees F (175 degrees C).
  • Place peppers in a nonstick casserole dish. Insert a slice of Cheddar cheese and a slice of Monterey Jack cheese into each pepper. Spoon some ground beef mixture into each pepper. Place the remaining beef on top of the peppers, and cover with enchilada sauce. Cover with aluminum foil.
  • Bake in the preheated oven for 15 minutes. Remove the foil and sprinkle grated Cheddar cheese on top of the peppers. Bake until peppers are bubbly and fragrant, another 45 minutes.

Time 1h10m

Yield 4

Number Of Ingredients 9

1 cup shredded Cheddar cheese
1 cup shredded mozzarella cheese
⅔ pound bulk breakfast sausage
4 medium green bell peppers
salt and ground black pepper to taste
1 teaspoon olive oil, or as needed
4 cups frozen shredded potatoes
1 medium onion, diced
4 large eggs, beaten

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Combine Cheddar and mozzarella cheeses in a bowl.
  • Heat a large skillet over medium-high heat. Cook and stir sausage in the hot skillet until browned and crumbly, 5 to 7 minutes. Set sausage aside.
  • While sausage is frying, bring a pot of water to a boil. Cut the tops off of the green peppers and trim the insides. Parboil the peppers in the pot, 4 to 5 minutes. Remove to cold water, dry, and lightly salt the insides.
  • Heat oil in the same skillet over medium-high heat. Fry the potatoes and onion in the hot oil, breaking up and turning periodically, until potatoes are golden brown and crispy, 5 to 7 minutes. Add sausage, 1/2 of the cheese blend, eggs, salt, and pepper. Turn off heat, mix gently but thoroughly, and let sit for 5 minutes. The eggs will not be fully cooked at this point, but will finish while baking.
  • Give the potatoes, eggs, and sausage blend one final mix and then gently stuff into the green peppers about 90% full, leaving space for reserved cheese blend. Do not pack tightly. Place in a baking dish and cover.
  • Bake in the preheated oven for 15 minutes. Uncover and continue to cook until eggs are set and peppers are tender, about 10 minutes. Top with reserved cheese blend and turn on the oven's broiler. Broil until cheese is browned, 4 to 5 minutes.

Tips:

  • Choose large poblano peppers with smooth, unblemished skin. Look for peppers that are deep green in color and have a firm feel.
  • Roast the poblano peppers directly over an open flame or under a broiler until the skin is blackened and blistered. This will make it easy to peel off the skin.
  • Once the peppers are roasted, place them in a paper or plastic bag and let them steam for 10-15 minutes. This will help to loosen the skin even more.
  • Once the peppers are cool enough to handle, peel off the skin. Be careful not to tear the flesh of the peppers.
  • Stuff the poblano peppers with your favorite fillings. Some popular fillings include cheese, beans, rice, and meat.
  • Bake the stuffed poblano peppers in a preheated oven until the filling is heated through and the peppers are tender.
  • Serve the stuffed poblano peppers with your favorite toppings, such as salsa, sour cream, or guacamole.

Conclusion:

Stuffed poblano peppers are a delicious and versatile dish that can be enjoyed for breakfast, lunch, or dinner. They are also a great way to use up leftover ingredients. With so many different variations to choose from, there is sure to be a stuffed poblano pepper recipe that everyone will enjoy.
