QUICHE PASTRY CUPS
My grandmother used to make egg cup surprises for family brunches on special occasions. The added fillings were always a surprise; she never seemed to use the same combination of ingredients twice. As children, we had a guessing game as to what we'd find in the tender crust, which added an aspect of family fun to our meal. -Denalee Standart, Rancho Mureta, California

MUFFIN SIZED BREAKFAST QUICHE
From the kitchen of Leanne Ely author of "Saving Dinner." Measurements are approximate and cooking time and servings depends on the size of your muffin tin cups and of course the size and appetite of who you are serving. This is a great and easy idea and I'm sure there could be many variations; different types of cheese, a little garlic, maybe some crumbled bacon, etc.

- Saute the Chopped Onions in a pan with the tablespoon of oil, until translucent.

- Into the greased muffin cups add about 3 or 4 leaves of Spinach. (You probably won't use the whole bag.).

- Top the onions with about 1 Tablespoon each of the Cheddar Cheese.
- Then ladle enough egg mixture into each muffin cup to fill the tin about 2/3 full.
- Bake your little quiches for 10-20 minutes, (depending on the size of your muffin tin cups.) They should be nicely browned on top, but do not overcook. Check for doneness with a toothpick.

Tips:
- Use a muffin tin with nonstick coating or line it with parchment paper to prevent the quiche cups from sticking.
- Whisk the eggs and milk together until well combined. This will help to ensure that the quiche cups are smooth and fluffy.
- Be careful not to overfill the muffin tins. The quiche cups will rise as they bake, so leave a little bit of room at the top.
- Bake the quiche cups until they are set in the center. This will take about 25-30 minutes. You can check to see if they are done by inserting a toothpick into the center of a quiche cup. If the toothpick comes out clean, the quiche cups are done.
- Let the quiche cups cool slightly before serving. This will help to prevent them from falling apart.
Conclusion:
Breakfast quiche cups are a delicious and easy-to-make breakfast or brunch dish. They are perfect for busy mornings or for feeding a crowd. With a variety of fillings to choose from, there is sure to be a quiche cup that everyone will enjoy. So next time you are looking for a quick and tasty breakfast or brunch option, give breakfast quiche cups a try!
