Time 1h

Yield 6-8 serving(s)

Number Of Ingredients 12

1 sheet puff pastry (approximately 8x10 inch)
12 eggs
2 minced garlic cloves
2 leeks, cleaned and chopped (discarding leaves)
2 celery ribs (chopped)
1 sprig rosemary (finely chopped)
1 lb bulk breakfast sausage (browned and drained)
3 tablespoons unsalted butter
1/2 cup parmesan cheese (grated)
1/2 cup all-purpose flour
1 quart milk
salt and pepper

Steps:

  • Directions:.
  • Melt butter in a large heavy bottomed pot (Dutch oven or stock pot) over medium heat. Add leeks, carrots, celery, garlic, and rosemary and saute until vegetables soften (about 10 min.). Stir in flour and continue to cook until the flour is well incorporated. At this point, stir in the cooked sausage, milk and parmesan cheese. Bring to a boil and then reduce heat and allow to simmer (stirring occasionally) until the gravy thickens (about 10-15 min.). Season with salt and pepper to taste.
  • Assembly:.
  • Pour thickened gravy into a medium sized casserole dish. Top with scrambled eggs. Cover the casserole dish with the puff pastry dough, crimping the dough around the edge of the dish. Lightly brush the pastry dough with egg wash. Place in preheated oven (400 degrees) and bake for approximately 30 minutes or until the pastry is golden brown.

Tips:

  • Use a variety of vegetables. This will give your pot pie a more complex flavor and texture. Some good options include carrots, celery, onions, peas, and corn.
  • Don't overcook the vegetables. You want them to be tender but still have a bit of a bite to them.
  • Use a good quality pie crust. This will make a big difference in the overall flavor of your pot pie.
  • Don't be afraid to experiment with different flavors. You can add herbs, spices, or even cheese to your pot pie to create a unique and delicious dish.
  • Make sure the pot pie is cooked all the way through before serving. Otherwise, you risk serving undercooked food, which can be dangerous.

Conclusion:

Breakfast pot pie is a delicious and versatile dish that can be enjoyed for breakfast, lunch, or dinner. It's easy to make and can be tailored to your own personal preferences. So next time you're looking for a quick and easy meal, give breakfast pot pie a try. You won't be disappointed.
