- Arrange 5 strips of the bacon in parallel rows on a baking sheet lined with parchment, the edges of the slices touching but not overlapping. Working with 1 strip at a time, arrange the remaining strips perpendicular to the first ones, weaving the strips over and under to form a lattice.
- Spray an 8-inch square baking dish with cooking spray. Roll the puff pastry into a 12-inch square and press into the bottom and up the sides of the prepared dish. Trim the edges that overhang with a paring knife. Whisk the eggs, half-and-half, cheese, 1 teaspoon salt and a few grinds of black pepper in a large bowl until well combined. - Preheat the oven to 400 degrees F.
- For the bottom layer: In a large pan on medium-high heat, add the oil, sausage and chorizo. Using a wooden spatula or, even better, a wired and wavy potato masher, break up the chorizo and sausage until they are homogenous and resemble ground beef in its tiniest form. Once broken down, continue to cook until the sausage is cooked through and orange fat is rendered from the chorizo, 10 to 12 minutes. Using a slotted spoon to drain off excess fat, transfer the mixture to an 8-by-8-inch casserole dish.
- For the middle layer: In the same pan with the remaining fat from the meat, quickly add and saute the onions and peppers with a pinch of salt and pepper until tender and the moisture from being frozen is cooked out, 5 to 8 minutes. - For the top layer: In a large bowl, add the hash browns, butter, steak rub and remaining fat from the pan. Season generously with salt and pepper and toss to coat. Sprinkle this layer on top of the cheese and gently press down, but not too tight so steam can escape.

- Pie Crust:.
- Add flour and salt in bowl.
- Cut in shortening till flour resembles small peas.
- Add water and knead till dough is soft and pliable.
- Cover in plastic and chill in refrigerator for 30 minutes.
- Filling:.
- While crust is chilling cook bacon and sausage. Do not drain.
- Whisk eggs in bowel with spices till eggs are fluffy. Set aside.
- Putting it all together:.
- Roll out pie crust on floured surface. Should be thin 1/8 in to 1/4 in will do nicely. (I tend to stay on the 1/8 in side.).
- Roll dough up onto your rolling pin and roll out over 9in deep dish pie plate.
- Gently lift up edges and help crust down into the pie plate starting in the center and moving to the outer edges to remove air out from under crust.
- With a fork poke holes in bottom of pie crust. (this helps air escape so it doesn't bubble up in the middle.).
- Flute edges as desired.
- Whisk an egg yolk and brush over the crust. (this is to help seal crust so it doesn't get soggy while baking.).
- Mix sausage and bacon together and put in pie crust.
- Pour egg and spice mixture into the pie.
- Top with extra sharp cheddar cheese.
- Take the second pie crust and use as a lid on the pie.
- Press edges of both crusts together.
- Using a knife cut vent slices in center of crust in an x pattern.
- Brush lid with rest of whisked yolk.
- Bake at 350 degrees F for 30 min or until crust is golden brown.
- A toothpick inserted in center of pie should come out clean if eggs are done.

- 1. Preheat oven to 350 degrees. Open the tube of canned biscuits and place all of them in the bottom of a 9 inch glass pie pan. Press together with fingertips, pushing the dough up the side of the plate as much as you can. (After a few minutes, it will start to shrink back, so keep pushing it together and up the sides of the plate before you add the filling.)
- 2. Fry diced bacon until cooked to your liking. (Or cook bulk sausage in loose pieces.) Drain most of the drippings off. Arrange meat in the bottom of the pie dish with your cooked hash browns (if you decide to use them) Break your eggs into a mixing bowl and whip until thoroughly blended. Pour this over the meat mixture in the pie dish. Remember the canned biscuits will rise a little, so be sure and do not over-fill the pie.
- 3. Top evenly with shredded cheese. Place in preheated oven and bake uncovered 30 to 40 minutes... The edges of the biscuits should be browned. Using a toothpick, test for doneness. Remove from oven and cool about 10 minutes before slicing. Serve hot, or cool completely, slice and place slices in freezer bags. You can pull one out of the freezer at a time, and microwave it for your convenience as desired. (I recommend serving this with a delicious salsa of your choosing. I use ("La Costena" brand) green tomatillo salsa that isn't too spicy. This lends it a wonderful and savory Tex-Mex flavor!)
- 4. As a side note... Feel free to add other ingredients, like carmelized onions with chunks of sweet bell peppers or spicy jalapenos, chorizo, etc.. - In a medium bowl combine potatoes, melted butter, & bouillon. Mix well.
