Huevos rancheros are my go-to Saturday morning breakfast treat!

2 ½ tablespoons olive oil, divided
½ cup chopped yellow onion
¼ cup chopped green bell pepper
1 medium tomato, chopped
1 clove garlic, minced
½ teaspoon cayenne pepper
salt and ground black pepper to taste
4 corn tortillas
4 eggs
1 (14 ounce) can refried beans, heated
¾ cup shredded Mexican cheese blend
1 jalapeno pepper, chopped
¼ cup fresh cilantro leaves, or to taste
½ avocado, sliced

Steps:

  • Heat 1/2 of the oil in a pan over medium heat. Add onion and bell pepper; cook and stir until softened, about 5 minutes. Add tomato, garlic, cayenne pepper, salt, and pepper. Cook for 2 minutes more. Set salsa aside.
  • Heat about 1 teaspoon oil in a pan. Add tortillas one at a time; cook until heated through, about 20 seconds each. Keep warm.
  • Heat remaining oil in the same pan over medium-high heat. Pour in eggs. Cook until set to your desired consistency, 4 to 6 minutes.
  • Spread a thin layer of refried beans onto each tortilla. Add a spoonful of salsa. Sprinkle with shredded cheese. Add a fried egg and sprinkle some more cheese, chopped jalapeno, and cilantro on top. Serve immediately with avocado and remaining refried beans and cheese on the side.

4 large eggs
1 large onion sliced in rounds
1/2 c fresh cilantro chopped
1 large jalapeno, sliced in small round slices. use only one if you dont want to much heat or use half.
1/4 c canola oil or corn oil
2 clove fresh garlic put through a garlic press or mashed.
1 c my red salsa ( recipe posted)
1 c water
1 tsp salt
1/2 tsp cumin powder
1/2 tsp dried oregano
1/2 tsp ground black pepper

Steps:

  • 1. In a large skillet, heat the oil add the onion, sliced jalapeno, garlic, and cilantro. Saute for about three minutes. Next add the cup of red salsa and 1 cup water. Add garlic powder, oregano, cumin, salt, pepper. Lower the flame to medium and stir well cover for 3 minutes and let simmer.
  • 2. Next uncover and crack four eggs into the simmering salsa. space them as far apart from each other as possible spoon some sauce over each one careful not to break the egg yolk cover and let simmer for 3 more minutes. After three minutes have passed uncover and check to see if your eggs are covered white. You do not want the eggs to cook throughly. You want the yolk to be very soft like when you fry an egg sunny side up. The white part cooked but the yolk just set but not cooked through. What you have done is poach your eggs in the salsa.
  • 3. Serve your Huevos Rancheros next to refried beans, any breakfast meat you like such as ham, bacon, or sausage or Mexican chorizo. I like to put 2 or 3 pieces of chicharones on the plate, "pork cracklings", will post recipe this weekend. Add Tortillas and your favorite breakfast beverage. Buen appetito. Enjoy
  • 4. My picture above features huevos rancheros, refried beans, ham, chicharones and corn tortillas. You can opt for your favorite flour tortilla if the corn are not to your liking. Pass the extra salsa. LOL

1 tablespoon vegetable oil
4 eggs
¼ cup shredded sharp Cheddar cheese
½ cup salsa
½ tomato, thickly sliced
2 tablespoons sour cream
salt and ground black pepper to taste

Steps:

  • Heat a skillet over medium-high heat. Heat tortillas 1 at a time, flipping until heated through, 1 to 2 minutes per side.
  • Heat vegetable oil in a separate skillet over medium heat. Crack eggs gently into skillet in a single layer, being careful not to break the yolks. Sprinkle Cheddar cheese over the eggs, avoiding putting too much cheese on the egg yolks. Cook until eggs are set and cheese is melted, 3 to 5 minutes.
  • Place tortillas on serving plates; spoon 1/4 cup salsa onto the center of each. Top each tortilla with tomato slices, a dollop of sour cream, and 2 cooked eggs. Season with salt and pepper.

1/2 cup cornmeal
1/2 cup water
2 eggs, beaten
1 cup gluten free shredded Monterey Jack Cheese (4 oz)
1/2 lb gluten free chorizo or bulk spicy Italian pork sausage
6 eggs, beaten
1 cup gluten free Old El Paso™ Thick 'n Chunky salsa
1/2 cup gluten free shredded Monterey Jack Cheese (2 oz)
2 tablespoons chopped fresh cilantro

Steps:

  • Heat oven to 350°F. Spray 12-inch pizza pan with cooking spray (without flour).
  • In medium bowl, stir Bisquick mix, cornmeal, water and 2 eggs. Add 1 cup cheese; stir until blended. Spread in pan. Bake 15 minutes or until set.
  • Meanwhile, in 10-inch nonstick skillet, cook chorizo over medium-high heat, stirring frequently, until fully cooked. Remove to small bowl; set aside. Wipe out skillet. Add 6 eggs to skillet; cook over medium-low heat until almost set (eggs will still be moist). Gently stir chorizo into eggs.
