A fried-rice twist on bacon and eggs! My dad used to make this for me on Saturday mornings when I was a kid; it's an easy and tasty brunch option. You can substitute 1 bunch broccoli for the frozen peas, if desired.

Categories     Breakfast and Brunch     Eggs

Time 50m

Yield 6

Number Of Ingredients 8

4 cups water
2 cups uncooked white rice
6 slices bacon
4 eggs, beaten
1 large yellow onion, chopped
1 cup frozen peas
4 green onions, chopped
1 ½ tablespoons soy sauce, divided

Steps:

  • Bring water and rice to a boil in a saucepan. Reduce heat to medium-low, cover, and simmer until rice is tender and liquid is absorbed, 20 to 25 minutes.
  • Place bacon in a large skillet and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Transfer bacon slices to a paper-towel lined plate to drain and crumble into bite-size pieces; reserve rendered bacon fat in skillet.
  • Cook and stir eggs in the same skillet over medium heat until slightly set, 1 to 3 minutes. Stir yellow onion, peas, green onion, and 1 1/2 teaspoons soy sauce into eggs; cook and stir until yellow onion is translucent, about 5 minutes more. Reduce heat to low; stir rice, crumbled bacon, and remaining soy sauce into egg mixture until well-combined and heated through, 1 to 3 minutes.

MY FAVORITE BREAKFAST, STIR FRIED RICE AND CHEESE!

My Favorite Breakfast, Stir Fried Rice and Cheese! image

I love this dish to distraction! I am completely guessing on the amounts, as I just throw it together.

Provided by pammyowl

Categories     Breakfast

Time 10m

Yield 2 serving(s)

Number Of Ingredients 5

1 cup brown rice, cooked
1 tablespoon butter or 1 tablespoon olive oil
1/4 cup cheddar cheese, grated
2 tablespoons salsa, I prefer mild
1 tablespoon Braggs liquid aminos, to taste (soy sauce works, too)

Steps:

  • Heat the butter or oil in a skillet.
  • Add the rice, stir fry it for a time.
  • Remove, put in a bowl add the rest of the ingredients, toss and devour!

Tips:

  • Use leftover rice: Using leftover rice is the key to achieving the perfect texture in breakfast fried rice. Day-old rice has less moisture, which prevents the dish from becoming mushy.
  • Choose the right type of rice: While any kind of rice can be used, medium-grain rice, such as jasmine or sushi rice, is the traditional choice for fried rice. These varieties have a slightly sticky texture that holds the dish together well.
  • Prepare the rice properly: Before cooking the rice, rinse it thoroughly in cold water to remove any excess starch. This will help prevent the rice from clumping together.
  • Use a well-seasoned wok or skillet: A well-seasoned wok or skillet will help prevent the rice from sticking and burning. If you don't have a wok, a large skillet will work just fine.
  • Cook the rice over high heat: High heat is essential for achieving the slightly crispy texture that is characteristic of breakfast fried rice. Make sure your wok or skillet is very hot before adding the rice.
  • Don't overcrowd the wok or skillet: If you overcrowd the wok or skillet, the rice will not cook evenly. Cook the rice in batches if necessary.
  • Use a variety of vegetables: Breakfast fried rice is a great way to use up leftover vegetables. Feel free to add any vegetables you like, such as onions, peppers, carrots, broccoli, or snow peas.
  • Add protein: For a heartier meal, add some protein to your breakfast fried rice. Some popular options include eggs, chicken, shrimp, or tofu.
  • Season to taste: Breakfast fried rice is typically seasoned with soy sauce, oyster sauce, and fish sauce. However, you can adjust the seasonings to your own taste.

Conclusion:

Breakfast fried rice is a quick, easy, and delicious meal that can be enjoyed by people of all ages. With a few simple tips, you can make breakfast fried rice that is as good as, or even better than, your favorite takeout. So next time you're looking for a quick and easy breakfast, give breakfast fried rice a try. You won't be disappointed.
