1/2 c cooked cabbage, chopped
1/2 c leftover corned beef, chopped
2 eggs
salt & pepper to taste
1 Tbsp butter
1 slice irish soda bread

Steps:

  • 1. Melt butter in a skillet and add chopped cabbage. Saute until it begins to carmelize then add corned beef and saute 1 minute more. Beat eggs and add to skillet. Scramble as usual.
  • 2. While eggs are cooking, toast Irish Soda bread.
