BACON BREAKFAST ENCHILADAS RECIPE - (4.2/5)

Bacon Breakfast Enchiladas Recipe - (4.2/5) image

Provided by mzander

Number Of Ingredients 8

1 pound sausage (optional)
2 cup shredded cheddar cheese
8 (8 inch) flour tortillas
6 eggs
1 tablespoon all-purpose flour
2 cups half and half
1/2 teaspoon salt
3 ounces of cooked bacon or bacon Bits

Steps:

  • In a skillet over medium high heat, brown sausage and then drain fat. In a large bowl, stir together browned sausage, 1 cup cheese and 1/2 of the bacon. Place 1/8 of the mixture down the center of a tortilla. Roll up and place seam-side down in a sprayed 9x13 baking dish. Repeat until all tortillas are filled. In another large bowl beat eggs, flour and salt. Mix in half and half. Pour over the tortillas in the pan. You can cover the dish and place in the fridge or bake immediately. When ready to bake, preheat the oven to 350 degrees fahrenheit. Uncover dish and sprinkle remaining 1 cup of cheese over tortillas. Sprinkle the rest of the bacon bits over cheese. Cover with foil and bake for 35 minutes. Uncover dish and bake 10 minutes longer or until set and cheese is melted.

Tips:

  • Choose the right tortillas: Corn or flour tortillas can be used for breakfast enchiladas; however, corn tortillas are the more traditional choice.
  • Make sure the tortillas are pliable: If the tortillas are too stiff, they will crack when you roll them. To soften them, you can warm them in the microwave for a few seconds or wrap them in a damp paper towel and heat them in a skillet over medium heat.
  • Don't overfill the tortillas: Otherwise, they will be difficult to roll and may fall apart.
  • Use a variety of fillings: Breakfast enchiladas are a great way to use up leftover ingredients. Some popular fillings include eggs, potatoes, chorizo, black beans, and cheese.
  • Don't be afraid to experiment: There are many different ways to make breakfast enchiladas. Feel free to adjust the recipe to suit your own tastes.

Conclusion:

Breakfast enchiladas are a delicious and easy-to-make meal that can be enjoyed by people of all ages. They are perfect for a lazy weekend brunch or a quick weekday breakfast. With a little planning, you can have a hot and satisfying breakfast enchilada on the table in no time. So next time you're looking for a new breakfast recipe, give breakfast enchiladas a try!
