6 eggs
1 lb ground beef
1 teaspoon ground cumin
1 teaspoon chili powder
salt & freshly ground black pepper
1/4 cup beef broth
16 ounces chunky salsa
8 ounces cheese, about 2 cups (shredded Mexican cheese blend)
10 flour tortillas

Steps:

  • Heat butter over low heat in a large skillet and add scrambled eggs; cook until set and set aside.
  • Brown ground beef in skillet, season with cumin, chili powder, salt and pepper; add broth and cook until liquid evaporates.

1 (1-pound) package Jimmy Dean Premium Pork Sausage
6 large eggs, scrambled
2 cups shredded Cheddar or Mexican-blend cheese, divided
1 pinch salt
1 pinch ground black pepper
6 (6 inch) corn or flour tortillas
4 (10 ounce) cans enchilada sauce

  • Spray a large (9x13) baking dish with cooking spray and set aside.
