2 c cooked and crumbled sage sausage
1 c cooked and crumbled bacon
2 - 3 c mexican blend shredded cheese
1 1/2 large freshly graded white yukon gold potatoes (should have 4 cups)
3/4 medium freshly graded sweet potato (should have 2 cups)
8 jumbo eggs, boiled, peeled and mashed (should have 3 cups)
1 bunch scallions, diced
2 large anaheim chili peppers (you can use hot peppers if you like)
vegetable cooking oil and 2 tablespoons unsalted butter

Steps:

  • 1. Preheat oven at 350 degrees Spray your sheet pan, 9 x 13, with olive oil. You can use any brand or kind of spray, this is what I use. peel and grade your potatoes, set aside.
  • 2. Cook your sausage and bacon, crumble and set aside. Boil your eggs, peel and smash. (Should be 2 cups) Diced your onions and peppers, set aside.
  • 3. Pan fry your white and sweet potatoes together in vegetable oil and 2 tablespoons unsalted butter. After they have browned and tender, place in your pan.
  • 4. In the same frying pan cook your onions and peppers until tender.
  • 5. Start layering up your ingredients: Potatoes cheese sausage eggs scallions & pepper mix Bacon top with more cheese
  • 6. Place in your preheated oven (350 degrees) for about 30 minutes or until all ingredients are hot and the cheese is melted.

8 slices of fresh bread, cubed
1 -1 1/2 lb pork sausage (or sausage/bacon combination)
2 cups cheddar cheese, grated
1 (4 ounce) can sliced mushrooms
3/4 teaspoon dry mustard
1 (10 ounce) can cream of mushroom soup
1/2 medium green pepper (chopped)
1/2 medium red pepper (chopped)
1/4 cup black olives (chopped)
2 1/2 cups milk
8 extra large eggs

  • Trim crust from bread and cut in 2 inch cubes Spray 9 X 13 Casserole dish with nonstick spray and put cubed bread in the dish Brown and drain sausage Add chopped peppers and olives and stir into mixture (heat through only) Combine beaten eggs, dry mustard, and 2 cups of milk in a bowl.
