BREAKFAST-FOR-DINNER EGG BOATS

Breakfast-for-Dinner Egg Boats image

Provided by Bev Weidner

Categories     main-dish

Time 1h5m

Yield 4 boats

Number Of Ingredients 9

1/3 pound breakfast (country) sausage
6 large eggs
1 cup milk
1 teaspoon Dijon mustard
Coarse salt
Four 7-inch mini baguettes or bolillo rolls
1/2 cup finely chopped kale
1/2 cup shredded Cheddar
Parsley leaves, for garnish

Steps:

  • Preheat the oven to 375 degrees F.
  • Brown the breakfast sausage in a medium skillet over medium heat, breaking it up with a wooden spoon, about 6 minutes.
  • Whisk together the eggs, milk, mustard and a pinch of salt in a large mixing bowl.
  • Cut a long oval down the center of each bread, about 2 inches wide and 4 inches long. Hollow out most of the insides, like a canoe, leaving about 1/2-inch border all the way around. Place on a baking sheet, then gently pour half the egg mixture into each "boat." Sprinkle with the browned breakfast sausage and a few pinches of chopped kale, then top with remaining egg mixture.
  • Top each boat with the shredded Cheddar, and bake until the cheese is browned and bubbly and eggs are just set, between 25 to 35 minutes. Let cool about 5 minutes, then garnish with parsley and serve!

Tips:

  • Choose the Right Bread: For a sturdy boat that holds its shape, use a hearty bread like sourdough, French bread, or a sturdy white bread. Avoid soft, delicate breads like sandwich bread or brioche, as they may become soggy.
  • Make Even Boats: Use a sharp knife to cut even, straight slices of bread. This will help the boats bake evenly and look more uniform.
  • Don't Overcrowd the Boats: Leave enough space between the boats on the baking sheet so that they don't touch during baking. This will allow for even cooking and prevent the boats from becoming soggy.
  • Use Your Favorite Fillings: The possibilities are endless when it comes to fillings for breakfast boats. Use your favorite breakfast ingredients, such as eggs, cheese, bacon, ham, vegetables, and salsa. Get creative and experiment with different combinations to find your favorite.
  • Cook until Golden Brown: Bake the boats until the bread is golden brown and the fillings are cooked through. The exact baking time will depend on the type of bread and fillings you use, so keep an eye on them and adjust the cooking time as needed.

Conclusion:

Breakfast boats are a fun and easy way to enjoy a delicious and filling breakfast. With a variety of bread and filling options, there are endless possibilities to create a breakfast boat that everyone will love. Whether you're making them for a special occasion or just a weekend brunch, breakfast boats are sure to be a hit. So gather your ingredients, preheat your oven, and get ready to enjoy a delicious and creative breakfast experience!
