Time 3h30m

Yield 24

Number Of Ingredients 8

¾ cup scalded milk
4 ½ tablespoons shortening
¼ cup sugar
2 ¼ teaspoons salt
¾ cup warm water
1 (.25 ounce) package active dry yeast
4 ½ cups all-purpose flour, divided
1 teaspoon melted shortening, or as needed

Steps:

  • Stir milk, 4 1/2 tablespoons shortening, sugar, and salt together in a bowl. Cool until mixture is lukewarm.
  • Pour water into a bowl and sprinkle yeast over the top. Let stand until yeast softens and begins to form a creamy foam, about 5 minutes; stir. Stir milk mixture into yeast mixture until smooth.
  • Beat 2 1/4 cups flour into yeast mixture until smooth. Gradually stir in remaining flour until dough comes together.
  • Turn dough out onto a lightly floured work surface and knead until dough is smooth and elastic, about 8 minutes. Place dough in an oiled bowl, brush with melted shortening, cover the bowl with a clean towel, and set in a warm place to rise until doubled in volume, about 2 hours.
  • Punch dough down and form into 24 rolls. Place rolls on a lightly greased baking dish, cover with a towel, and let rise until doubled in volume, about 40 minutes.
  • Preheat oven to 350 degrees F (175 degrees C).
  • Bake in the preheated oven until golden brown, 12 to 15 minutes.

STUFFED TURKEY ROLL

Stuffed Turkey Roll image

When a friend gave me some ground turkey to use up, I looked for an inventive way to prepare it. I found this recipe while scouring through my collection. My family loves it because of the stuffing in the middle. For a variation, I sometimes use cheese on top instead of bacon.-Patricia Eckard, Singers Glen, Virginia

I came up with this thinking of a different way to serve the turkey breast. The sour cream seals in the moisture and no one would ever guess that it's in there. A great new way to try turkey. This is my husband's new favorite turkey dish.

EMERIL'S TURKEY ROULADE

Emeril's Turkey Roulade image

Don't let the fancy name fool you. This simple and quick-to-assemble turkey dish is a crowd-pleasing take on the usual turkey breast. The meat is wrapped in 12 slices of savory, salty bacon and stuffed with an aromatic herb stuffing.

Provided by Martha Stewart

Categories     Food & Cooking     Ingredients     Meat & Poultry     Pork Recipes

Time 1h45m

Number Of Ingredients 4

1 boneless, skinless turkey breast half (about 3 pounds)
Emeril's Wild-Mushroom Stuffing
12 slices bacon
Thyme sprigs, for garnish (optional)

Steps:

  • Preheat oven to 400 degrees. Place turkey, skinned side up, on a work surface. Hold a sharp knife parallel to the cutting surface, and starting on the thicker side, cut the turkey almost completely in half without cutting all the way through; open like a book. With a meat mallet or small heavy skillet, pound turkey to a 1/2-inch thickness.
  • Spread stuffing on turkey breast, leaving a 1/2-inch border all around. Starting at a long end, roll turkey over stuffing; pat and tuck turkey to form a uniform log.
  • Place turkey roulade, seam side down, on a rimmed baking sheet. Lay bacon crosswise over turkey, overlapping slices slightly. Using kitchen shears, trim ends of bacon so slices extend 1/2 inch beyond roulade on each side; tuck ends under. Roast, until an instant-read thermometer inserted in thickest part registers 165 degrees, 45 minutes to 1 hour. Let rest 15 minutes; slice and serve, garnished with thyme, if desired.

Tips:

  • To ensure the turkey rolls are cooked evenly, use a meat thermometer to check the internal temperature. Insert the thermometer into the center of the thickest part of the roll and cook until it reaches 165°F (74°C).
  • If you don't have a meat thermometer, you can also check for doneness by cutting into the center of the roll. The meat should be cooked through and no longer pink.
  • Feel free to adjust the seasonings in the breading mixture to your taste. You can add more or less garlic powder, onion powder, paprika, or cayenne pepper.
  • To make the rolls ahead of time, you can bread and roll them up, then cover them tightly and refrigerate for up to 24 hours. When you're ready to cook them, simply bring them to room temperature for 30 minutes before baking.
  • For a crispy coating, make sure the rolls are evenly coated in breadcrumbs before baking. You can also spray them with cooking spray before baking to help the breadcrumbs stick.

Conclusion:

Breaded turkey rolls are a delicious and easy-to-make main course that is perfect for any occasion. They can be served with a variety of sides, such as mashed potatoes, roasted vegetables, or rice. Whether you're looking for a quick and easy weeknight meal or a special dish for a holiday gathering, breaded turkey rolls are sure to please everyone at the table.
