Steps:
- Put the flour in a shallow bowl or lipped plate. Break the eggs into another shallow bowl and whisk with the salt and pepper. In a third shallow bowl mix the breadcrumbs with herbs.
- Bread the chops. Dredge a chop in the flour, shaking off the excess, then dip it into the eggs, and finally coat the meat evenly with the breadcrumbs. Set on a piece of waxed paper or baking sheet. Repeat with the remaining chops. Heat a large skillet over medium heat with enough oil to come halfway up the sides of the chops, about 1/4 cup. When the oil shimmers, add the chops and fry 3 to 4 minutes on each side, until golden brown and crispy. Drain on paper towels and serve immediately with lemon wedges.

Steps:
- Preheat convection oven to 400 degrees F (200 degrees C).
- Rub chicken breasts with olive oil and sprinkle both sides with salt and Creole seasoning. Place chicken in a broiler pan.
- Bake in the preheated oven for 10 minutes. Flip chicken and cook until no longer pink in the center and the juices run clear, about 15 minutes more. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C).
- Remove chicken from pan. Pour water into the pan, while scraping the browned bits of food off of the bottom of the pan with a wooden spoon. Add more water if needed to dislodge the browned bits; serve alongside chicken.

BREADED BAKED PORK CHOPS
This is a great, basic recipe for breaded baked pork chops. Feel free to experiment with different seasonings and breading. We just did a batch using honey-wheat bread crumbs which gave a slightly sweet taste that balanced our chosen Cajun seasoning.

Steps:
- Preheat the oven to 350 degrees F (175 degrees C).

- Bake in the preheated oven until pork chops are cooked through, 60 to 90 minutes. An instant-read thermometer inserted into the center should read 145 degrees F (63 degrees C).

Tips:
- Use a meat mallet or rolling pin to pound the pork chops or chicken breasts to an even thickness. This will help them cook evenly.
- To make the breading, you can use a food processor or blender to combine the breadcrumbs, Parmesan cheese, garlic powder, onion powder, salt, and pepper. If you don't have a food processor or blender, you can finely chop the breadcrumbs and Parmesan cheese by hand.
- When dredging the pork chops or chicken breasts in the egg wash, be sure to coat them evenly. This will help the breading adhere to the meat.
- When frying the pork chops or chicken breasts, be sure to use a heavy-bottomed skillet over medium-high heat. This will help to prevent the meat from sticking to the pan.
- Cook the pork chops or chicken breasts for 3-4 minutes per side, or until they are golden brown and cooked through.
- Serve the pork chops or chicken breasts immediately with your favorite sides.
Conclusion:
These breaded pork chops or chicken breasts are a quick and easy weeknight meal that the whole family will love. They are crispy, juicy, and flavorful, and they can be served with a variety of sides. Whether you are looking for a simple dinner option or a more elegant main course, these breaded pork chops or chicken breasts are sure to please.
