Number Of Ingredients 8

4 pounds beef rump roast
2 eggs
3 tablespoons water
4 cups dry bread crumbs, or more as needed
1 tablespoon garlic powder
1 tablespoon salt
½ cup grated Parmesan cheese
½ cup vegetable oil, or as needed

Steps:

  • Place the beef roast into the freezer for several hours, until very firm and almost frozen. Slice the beef about 1/8 inch thick across the grain. You can also ask the butcher to slice it very thinly for you.
  • Whisk the eggs and water together in a bowl. Spread the bread crumbs out onto a large sheet of aluminum foil, and sprinkle with garlic powder, salt, and Parmesan cheese. Mix all the crumb ingredients together until well combined. Dip each piece of beef into the egg mixture, then thoroughly coat with crumbs. Place the coated slices onto a sheet of foil on a baking sheet, and separate them with waxed paper as you dip and coat the beef.
  • Heat the vegetable oil in a large, heavy skillet until shimmering, and pan-fry the beef slices until golden brown, about 2 minutes on the first side and 1 minute on the second side. Fry 2 or 3 slices per batch.

Tips:

  • Choose a high-quality beef tenderloin: Look for a tenderloin that is firm to the touch and has a deep red color. Avoid tenderloins that are pale or have a lot of marbling.
  • Trim the beef tenderloin: Remove any excess fat from the tenderloin. This will help the breading to adhere to the meat and will also prevent the breading from burning.
  • Pound the beef tenderloin: This will help to tenderize the meat and make it more evenly cooked. To pound the tenderloin, place it between two pieces of plastic wrap and use a meat mallet to pound it until it is about 1/2-inch thick.
  • Season the beef tenderloin: Season the tenderloin with salt, pepper, and garlic powder. You can also add other spices, such as paprika, cumin, or chili powder, to taste.
  • Bread the beef tenderloin: First, dredge the tenderloin in flour. Then, dip it in beaten eggs. Finally, coat the tenderloin in breadcrumbs. Make sure to press the breadcrumbs into the meat so that they adhere.
  • Cook the beef tenderloin: You can cook the breaded beef tenderloin in a variety of ways. You can pan-fry it, bake it, or grill it. The cooking time will vary depending on the method you choose.

Conclusion:

Breaded beef tenderloin is a delicious and easy-to-make dish that is perfect for a special occasion. By following the tips above, you can make sure that your breaded beef tenderloin turns out perfectly every time.
