BREAD PUDDING RECIPE

If you like your bread pudding full of custard after baking, make the same amount of custard in this recipe and use less bread (or use the same amount of bread and use more custard), because the bread will soak up most of the liquid. Refer to above post for more info.

Provided by Shiran

Number Of Ingredients 6

450 g/16oz/16 slices 2-inch thick/one loaf day-old bread*
1 cup pecans ((or raisins, chocolate chips, cranberries, etc.))
6 large eggs
1 cup (200 g/7 oz) granulated sugar
4 cups heavy cream ((or milk, half & half, or a combination))
1 tablespoon vanilla extract

Steps:

  • Grease a 9x13-inch pan, and set aside.
  • Cut bread into 2-inch cubes. In a large bowl, mix together bread cubes and pecans. Place the mixture evenly in the pan.
  • In a large bowl, whisk eggs and sugar. Add cream and vanilla extract, and whisk to combine. Pour cream mixture over bread mixture in the pan until completely covered. Gently press down the bread cubes to fully cover with custard. It's best to let the casserole sit for 1 hour, covered, at room temperature, but if you're in a hurry, bake it right away.
  • Preheat oven to 325F/160C. Bake for 40-50 minutes or until custard has set and the top is golden brown. If the top is browning too fast, cover loosely with aluminum foil. Don't over bake or the bread will be dry. Let the pudding cool slightly before serving.
  • Bread pudding can be served warm or cold. It is best the same dat it's made.

BASIC BREAD PUDDING II

Basic Bread Pudding II image

This bread pudding is very versatile and lovely in texture. Christmas time can inspire a bread pudding by simply substituting a good-quality eggnog for the milk (or part of it). Also add a pinch of nutmeg and mace to produce a sumptuous holiday dessert. Otherwise, enjoy this just as it is with a dollop of whipped cream.

OLD FASHIONED BREAD PUDDING

Old Fashioned Bread Pudding image

This is an old family recipe that I've been using for over 30 years. It's a great way to use stale bread and/or rolls, but, it's especially good when you make it with the flavored "swirl" breads that are available in the stores. The finished dish is rich, egg-y and custard-y. It's like eating French Toast out of a bowl!! Try...

Time 1h20m

Number Of Ingredients 9

2/3 c granulated sugar
2 tsp flour
4 large eggs
1 tsp vanilla extract
4 c whole milk
5 c bread cubes (or equivalent amount of apple fritters)
2 Tbsp raisins (optional) (or 1 cup chopped apple if using apple fritters instead of bread)
3 Tbsp butter (or margarine)
1 tsp cinnamon, ground

Steps:

  • 1. Heat oven to 350 degrees F. Spray a 3-4 quart glass baking dish with cooking spray. Set aside. Have at the ready: a 9X13-inch baking pan with about 2" on water in it. You will need this to bake the bread pudding in a water bath.
  • 2. In a large bowl, mix the sugar and flour. Add the eggs and beat well (by hand).
  • 3. Add the vanilla and milk and mix well. Add the bread cubes and raisins Mix well. Let set for about 10-15 minutes until bread has absorbed some of the liquid.
  • 4. Pour into prepared baking dish. Dot with butter and sprinkle evenly with cinnamon.
  • 5. Place in baking pan (with water on the bottom) and place in heated oven.
  • 6. Bake for 60-70 minutes or until bread pudding is browned and firm.
  • 7. Cool slightly before serving. Serve garnished with whipped cream if desired. Store leftovers in refrigerator.
  • 8. BE VERY CAREFUL WHEN TAKING OUT OF THE OVEN AS THE WATER IN THE BAKING PAN IS EXTREMELY HOT!!!!
  • 9. HINT: you can use as much bread cubes as you want with this recipe. If you like your bread pudding dense, just add more bread cubes. But you may have to bake it longer so it sets up. If you do this, just keep and eye on it.... check every 5-10 minutes. I've already baked it for WELL over an hour.

Tips:

  • Selecting the Right Bread: Choose a firm and slightly stale bread like French bread, challah, or brioche. Fresh bread tends to be too soft and can result in a mushy pudding.
  • Preparing the Bread: Cut the bread into 1-inch cubes to ensure even cooking and a uniform texture. If using a loaf with a hard crust, consider removing it before cutting.
  • Soaking the Bread: This step is crucial for a moist and flavorful bread pudding. Soak the bread cubes in a mixture of milk, eggs, sugar, and spices overnight or for at least 30 minutes before baking.
  • Using a 9x13 Pan: A 9x13 inch pan is the most common size for baking bread pudding. It provides enough space for the bread to spread and rise, resulting in a uniformly cooked dish.
  • Baking the Pudding: Bake the bread pudding in a preheated oven at 350°F for 45-55 minutes or until a toothpick inserted in the center comes out clean. Cover the pudding with foil during baking to prevent excessive browning.

Conclusion:

Bread pudding is a versatile and delicious dessert that can be enjoyed warm or cold. The use of a 9x13 pan allows for easy preparation and even cooking. With careful selection of bread, proper soaking, and precise baking, you can create a delightful bread pudding that will satisfy your sweet tooth. Experiment with different bread types, mix-ins, and toppings to create your own unique and memorable bread pudding recipe.
