- Place a rack in the center of your oven and preheat the oven to 350 degrees F. Coat a 9x5-inch baking pan with nonstick spray. Line the pan with parchment paper so that the paper overhangs both sides, then lightly coat with spray again.
- In a large mixing bowl, whisk together the almond flour, flaxseed meal, baking soda, cinnamon (if using), and salt. In a separate bowl, whisk together the eggs, egg white, honey, apple cider vinegar, and cooled coconut oil until smooth. And the wet ingredients to the dry ingredients and, with a whisk or rubber spatula, stir until well combined. The batter will be thick and wet, like a muffin batter. Transfer to the prepared loaf pan and smooth the top.
- Bake until the top is toasty golden brown and a toothpick inserted in the center of the loaf comes out clean, about 35 to 40 minutes. Place the pan on a cooling rack and let cool in the pan for 10 minutes. Transfer from the pan to the rack (use the parchment overhang) and let cool completely. Slice and serve.

BREAD MACHINE ALMOND BREAD
I wanted a bread with some extra protein for breakfast, so I came up with this. This is an excellent very faintly sweet breakfast bread with an unusual but satisfyingly 'bread' texture. The crust has a great flaky/chewy consistency while remaining soft. It is dense but not heavy and the extra protein from the almond flour keeps the mid-morning munchies away. It is very good with a slice of cheese and some fruit on the side. This is not (nor was it intended to be) a gluten-free recipe; the addition of vital gluten is critical to maintain cell structure for the rise. The xanthan gum is only in there because I like the ability to slice my homemade bread and use it for sandwiches.

Tips:
- Choose the right almond flour: Fine almond flour works best for this recipe. It produces a light and fluffy bread. If you can only find almond meal, you can make your own almond flour by grinding it in a food processor until it reaches a fine consistency.
- Measure your ingredients carefully: Almond flour can be tricky to work with because it absorbs liquid differently than wheat flour. Be sure to measure your ingredients carefully, and don't overmix the batter. Otherwise, the bread will be dry and crumbly.
- Use fresh baking powder: Baking powder is essential for this recipe. Make sure you use fresh baking powder, as old baking powder will not work as well.
- Don't overbake the bread: Almond flour bread can dry out quickly, so it's important not to overbake it. Check the bread for doneness by inserting a toothpick into the center. If the toothpick comes out clean, the bread is done.
- Let the bread cool completely before slicing: Almond flour bread is best when it's cooled completely before slicing. This will help to prevent the bread from crumbling.
Conclusion:
Almond flour bread is a delicious and healthy alternative to traditional wheat bread. It's made with simple ingredients and is easy to make. With a few simple tips, you can make a perfect loaf of almond flour bread that your family and friends will love.
