DARK RYE (PUMPERNICKEL) BREAD FOR THE BREAD MACHINE.

Dark Rye (Pumpernickel) Bread for the Bread Machine. image

We're having avocado sandwiches for supper tonight and I wanted a nice bread to go with them, so I made a loaf of Pumpernickel. I didn't have any caraway seeds, so added a handful of sesame and sunflower seeds as well as some oat flakes. I did this when the machine beeped 3 times. This will give the bread more fiber and taste. I made a 2 lb. loaf with a medium crust. and followed the recipe for my Bread man Bread Machine. I've listed the ingredients as I put them into the machine. The estimated time on the bread machine might vary for yours, my bread machine sets the time automatically.

Number Of Ingredients 12

1 1/2 cups warm water (100-115'F)
1 1/2 tablespoons vegetable oil
2 tablespoons molasses
1 1/2 teaspoons salt
1 1/2 cups rye flour
1 1/2 cups bread flour
1 cup whole wheat flour
1/3 cup vital wheat gluten

1 tablespoon caraway seed
1 tablespoon cocoa powder (I used unsweetened)
2 teaspoons active dry yeast (I used red star from the jar)

Steps:

  • Put all the ingredients in the order given or as per your bread maker's instructions. I think the order is pretty standard, just make sure the yeast is the last thing you add and that it doesn't touch the liquids.
  • I used the Whole Wheat Bread setting as suggested in the recipe.
  • When the bread is done, remove the bread pan and cool for a few minutes, then turn it out onto a metal rack to cool complete before cutting.
  • Bon Appetit!

PUMPERNICKEL BREAD FOR BREAD MACHINE

Pumpernickel Bread for Bread Machine image

We love pumpernickel bread. It's great for Rueben sandwiches! You could make this into long hoagie rolls if you use only the dough setting and shape them yourself.

Categories     Other Breads

Time 2h40m

Number Of Ingredients 10

1/2 c milk
7 oz water
1 1/2 tsp salt
2 Tbsp molasses
1 1/2 tsp butter, softened
2 1/2 c bread flour
1 c rye flour
1 tsp onion powder
1 Tbsp cocoa powder for color (optional)
2 1/4 tsp active dry yeast (quick acting)

Steps:

  • 1. Place ingredients into bread machine pan in the order given. Use basic or whole wheat setting on the machine, and operate according to manufacturer's instructions.
  • 2. OR, use dough setting only. Turn dough out on oiled surface and shape your own bread. This would work well in a greased round casserole, let rise 1 hour, (can make cross mark on top after rising to allow escape of steam). Bake at 425 degrees about 25-30 minutes. You can even top with sesame seeds by using an egg wash and pressing the seeds in, as in the picture. (add seeds before baking)
  • 3. OR, shape into two regular loaves and place in greased smaller bread pans (8x4 inches). Let rise until double, about 45 minutes, then bake at 375 degrees for 25-30 minutes.

Tips:

  • Ensure you have the right ingredients and equipment before starting, including bread machine, measuring cups and spoons, and fresh, high-quality ingredients.
  • Activate the yeast in warm water before adding it to the bread machine. This helps ensure the yeast is active and will properly leaven the bread.
  • Use a kitchen scale to measure ingredients accurately. This is especially important for the molasses and cocoa powder, as too much or too little can affect the flavor and texture of the bread.
  • Follow the recipe's instructions carefully, especially regarding the order and timing of adding ingredients. The bread machine's kneading and rising cycles are designed to work together to create the best results.
  • Be patient during the rising and baking process. This bread takes longer to rise and bake due to the molasses and cocoa powder, but the wait is worth it for the delicious, hearty flavor.
