PORTUGUESE CORN BREAD FOR THE BREAD MACHINE (BROA)

Portuguese Corn Bread for the Bread Machine (Broa) image

Based on a recipe from Madge Rosenberg's delightful cookbook, The Best Bread Machine Cookbook Ever - Ethnic Breads. She says, "Light, grainy broa partners chili or a spicy stew or thick soup. Smear a fresh or toasted slice with butter or soft avocado and/or tomato, or ladle a fish stew over toasted broa." The default measurements are for a small 1 pound loaf; I have placed measurements for a large 1 ½ pound loaf in parentheses. Your bread machine may have a basic bread cycle much quicker than the 4 hour one I reference under the cook time. My photo shows it buttered with honey.

BREAD MACHINE ARGENTINE CHEESE & CORN BREAD

Bread Machine Argentine Cheese & Corn Bread image

This is based on a recipe from Madge Rosenberg's "The Best Bread Machine Cookbook Ever Ethnic Breads". She says, "Similar breads appear all over South America as far north as Venezuela. This version from the southern tip of the continent has enough color and taste to be eaten plain or with a meat broth or boiled beef." I use it as I would a corn bread with chili; I've even had it with butter and jam for breakfast!

BREAD MACHINE CORN BREAD RECIPE - (3.7/5)

Bread Machine Corn Bread Recipe - (3.7/5) image

Provided by dawnu1

Number Of Ingredients 9

1 cup cornmeal
1 - 1/4 cup flour
4 teaspoons baking powder
1/4 cup sugar
1 teaspoon salt
1 teaspoon vanilla
2 eggs - lightly beaten
1 cup milk
1/4 cup melted butter or oil

Steps:

  • Follow the instructions that came with your bread machine in terms of which ingredients to put in the machine first. Then select the cake setting with a light crust.

Tips:

  • To achieve a moist and flavorful cornbread, utilize fresh corn kernels instead of frozen or canned ones. If fresh kernels are unavailable, frozen kernels can be thawed and patted dry before use.
  • To add a smoky flavor to your cornbread, toast the cornmeal in a skillet over medium heat for a few minutes, stirring frequently, before using it in the recipe.
  • Elevate the texture of your cornbread by adding some cornmeal to the batter. This will create a slightly gritty texture that complements the sweetness of the corn. Adjust the ratio of cornmeal to all-purpose flour according to your desired texture.
  • For a richer, more decadent cornbread, substitute buttermilk for regular milk. The acidity in the buttermilk will react with the baking soda, creating a light and fluffy texture.
  • Enhance the sweetness of your cornbread by adding a tablespoon of honey or maple syrup to the batter. Alternatively, you can sprinkle some sugar on top of the batter before baking for a caramelized crust.
  • To ensure even cooking, preheat your bread machine according to the manufacturer's instructions before adding the ingredients.
  • If you prefer a crispy crust, brush the top of the cornbread with melted butter or cooking spray before baking.

Conclusion:

With its delightful combination of flavors and textures, cornbread is a versatile bread that can be enjoyed in various settings. Whether you prefer a moist and tender crumb or a slightly gritty texture, there is a cornbread recipe that will suit your taste. Experiment with different ingredients and techniques to create your perfect cornbread. Enjoy it as a side dish, a snack, or even as a breakfast treat.
