3 c. day-old sourdough bread
1/4 c. olive oil
3 tbsp. grated Parmesan cheese
1/4 tsp. garlic powder
1/4 tsp. salt
Black pepper, to taste
4 tbsp. salted butter (if using unsalted, sprinkle bread cubes with a pinch of salt)
3 c. torn sourdough bread
1/4 tsp. dried thyme, or your Favorite Herb

Steps:

  • For oven method croutons:Preheat the oven to 375º F.In a large bowl, combine the bread, olive oil, parmesan cheese, garlic powder, salt, and pepper. Toss well to distribute the ingredients.Spread the bread cubes out on a sheet pan, giving them plenty of space in between. Bake the bread cubes for about 10 minutes, or until slightly golden brown and crisp. Keep in mind that the staler and older the bread, the quicker it will brown, so color is a good indication of when it's done.Remove the croutons from the oven, and enjoy!For skillet method croutons:Melt the butter in a large skillet over medium heat. Add the torn bread pieces to the pan, and sprinkle with the dried thyme. Let the bread cubes sit in the pan for a few minutes until golden brown on at least one side, then you can give it a stir. stale or leftover bread***
herb/spice seasoning mix****
cooking spray, olive oil or your choice

Steps:

  • 1. Line a large cooking sheet with parchment paper and set aside. Turn oven to 325º
  • 2. ***Any kind of leftover bread will work. I've used hamburger or hot dog buns, white bread wheat bread, homemade bread and other kinds. It's okay to mix kinds of bread in the same batch.
  • 3. Cut or tear bread into 1-1/2" cubes (approximately. Spread the bread pieces out in a single layer.
  • 4. Spray bread generously with cooking spray (again your choice....I always use olive oil), Gently mix the bread so that all surfaces are covered with oil.
  • 5. ***** HERBS AND SPICES.   • 8. FOR BREAD CRUMBS, ADD THE FOLLOWING STEPS: Place bread pieces in food processor and process on medium to high speed until desired coarseness is reached. Dependent on the amount of bread you've toasted, you may need to process more than one batch.
  • 9. You can also reserve some of the bread pieces for croutons. So easy and so much better and cheaper than "store bought" bread crumbs.
