This can be used over meat, fish or chicken but I absolutely LOVE to drizzle a little over white rice. It's great over salad too.

Time 10m

Yield 8 serving(s)

Number Of Ingredients 6

1 cup green bell pepper
1 cup red bell pepper
1/2 cup onion
1 cup tomatoes
1/4 cup white wine vinegar
2 tablespoons olive oil

Steps:

  • Dice peppers, onions, and tomatoes.
  • Mix all of the ingredients in a bowl.
  • Let mixture sit for a while to bring out the flavors. (I prefer the vinaigrette a little on the colder side so I refrigerate it).
  • ** Side note: If you're going to add salt do it just before serving (salt will cause the tomatoes to dehydrate.) Enjoy!

BRAZILIAN VINAIGRETTE SAUCE (MOLHO DE VINAGRETE)

Brazilian Vinaigrette Sauce (Molho De Vinagrete) image

Traditionally served over meat and/or beans this sauce can be as hot as you like it. As a guide - cayenne peppers are roughly 10 times hotter than your run-of-the-mill jalapeno. As Ms. Hilton would say _"That's hot!"_ ;-)

This delicious salmon recipe is courtesy of Margot Olshan. At her Connecticut cafe, Margot finishes this salmon dish in the oven. But for a home cook, finishing on the stove works best.

Number Of Ingredients 8

1 tablespoon olive oil
2 boneless salmon fillet (6 ounces), skin-on
Coarse salt and freshly ground black pepper
2 cups cooked basmati rice
1 package (12 ounces) baby spinach, washed well and dried
1/2 cup Brazilian Vinaigrette
2 tablespoons Chimichurra Sauce
2 lime wedges, for serving

Steps:

  • Coat salmon with olive oil and season with salt and pepper. Add to a medium skillet set over medium-high heat, skin-side down. Cook until golden brown, 1 to 2 minutes. Turn fish and continue cooking until fish is still pink in the center, but flakes apart easily with a fork, about 5 minutes.
  • Divide spinach evenly between two serving plates; top with rice. Set salmon over rice. Drizzle 1/4 cup vinaigrette and 1 tablespoon chimichurra sauce over each piece of salmon; garnish each with a lime wedge. Serve immediately.

Categories     Condiment/Spread     Vegetable

Yield 8 portions

Number Of Ingredients 6

Note: all diced ingredients = ¼ inch
1 cup of diced green and red bell peppers.
½ cup diced onions
1 cup diced ripe tomatoes.
¼ cup white wine vinegar.
2 tbs of olive oil

Steps:

  • In a bowl, mix green and red peppers, onions, tomatoes, vinegar and olive oil. Hint: add salt to the salsa right before serving it. Salt dehydrates the tomatoes in the mixture if let for long time. Brazilian Vinaigrette Salsa is great with Brazilian Barbecues or on top of any meat, fish and sausage.

Tips:

  • Use fresh, ripe tomatoes for the best flavor. Look for tomatoes that are heavy for their size and have smooth, unblemished skin.
  • Chop the tomatoes into small pieces so that they can easily absorb the dressing.
  • Use a good quality olive oil. Extra virgin olive oil is the best choice, but you can also use a lighter olive oil if you prefer.
  • Add a little bit of vinegar to balance out the sweetness of the tomatoes. You can use red wine vinegar, white wine vinegar, or balsamic vinegar.
  • Season the dressing with salt and pepper to taste. You can also add other herbs and spices, such as garlic, basil, oregano, or thyme.
  • Let the dressing sit for at least 30 minutes before using it so that the flavors can meld together.
  • Use the dressing on salads, grilled vegetables, or fish. It can also be used as a marinade for chicken or beef.

Conclusion:

Brazilian vinaigrette is a delicious and versatile dressing that can be used on a variety of dishes. It is easy to make and can be tailored to your own taste preferences. With its bright, fresh flavor, Brazilian vinaigrette is sure to become a favorite in your kitchen.
