Time 30m

Number Of Ingredients 13

4 large frankfurters
4 hot dog buns, split
sauerkraut, to serve
1 tbsp vegetable oil
2 large onions, halved and sliced
1⁄4 tsp ground cinnamon
large pinch of chilli powder
2 tbsp honey
2 tsp American-style mustard, plus extra to serve
2 tsp ketchup, plus extra to serve
2 tsp tomato purée
2 tsp cider or white wine vinegar
1 tsp Worcestershire sauce

Steps:

  • First, make the onions. Heat the oil in a frying pan over a low-medium heat and cook the onions for 10-12 mins until golden and slightly charred in spots.
  • Stir in the cinnamon, chilli powder, honey, mustard, ketchup, tomato purée, vinegar, Worcestershire sauce, 2-3 tbsp water and a pinch of salt. Simmer for 1-2 mins until the onions are saucy, adding a splash more water if they seem dry. Taste and add a little more chilli powder, mustard or a pinch of sugar, if you like. Keep the onions warm if you're serving straightaway or cool and chill. Will keep in an airtight container in the fridge for up to five days. Reheat over a low heat before serving, adding a splash of water to loosen as needed.
  • Light a barbecue and wait until the coals are ashen, set a gas barbecue to medium or heat a griddle pan over a medium heat. Alternatively, bring a pan of water to a simmer. Cook the frankfurters for 15 mins on the barbecue or in a griddle pan until charred, or for 8 mins in a pan of simmering water. If using a barbecue, warm the buns over the coals, if you like. Spoon a little sauerkraut into each bun, top with a frankfurter and spoon over the onions. Drizzle over some extra mustard and ketchup.

BRAZILIAN HOT DOG (CACHORRO QUENTE)

Categories     main-dish

Time 45m

Yield 4 servings

Number Of Ingredients 15

2 tablespoons olive oil
1/2 teaspoon crushed red pepper
1 yellow onion, diced
1 green bell pepper, diced
1 pound ground sirloin
Kosher salt and freshly ground black pepper
2 cloves garlic, minced
One 15-ounce can crushed tomatoes
4 jumbo hot dogs
4 large brat rolls
1/4 cup grated Parmesan
1 cup crispy bacon bits
1 cup frozen peas, defrosted and slightly heated
1 cup crispy shoestring potatoes
Yellow mustard, for drizzling

Steps:

  • In a large saute pan, heat the oil over medium heat. Add the crushed red pepper, onions and green peppers and sweat until the onions are translucent, about 8 minutes. Add the beef, season with salt and pepper and cook, breaking it up with a spoon, until no longer pink, about 8 minutes. Add the garlic and continue to cook for 1 minute. Add the crushed tomatoes, hot dogs and 1/2 cup water and cook until the sauce thickens, about 15 minutes.
  • For the hot dog build: On each fresh brat roll, place a hot dog, then some meat sauce, Parmesan, bacon bits, peas and shoestring potatoes. Top with a drizzle of yellow mustard.

Tips:

  • When choosing hot dogs, opt for high-quality ones made with premium beef or pork. Look for hot dogs that are plump and evenly colored.
  • For the perfect bun, use a soft and fluffy hot dog bun that can hold up to the toppings. You can also use a split-top bun for a more traditional look.
  • Be generous with the toppings! Classic toppings include ketchup, mustard, and relish, but you can also add other favorites like sauerkraut, onions, and cheese. Get creative and experiment with different combinations.
  • If you're using a charcoal grill, let the coals burn until they are white-hot before grilling the hot dogs. This will help create a nice sear and prevent the hot dogs from sticking to the grill.
  • For a healthier version of the Brazilian street cart dog, try using turkey or veggie hot dogs. You can also use whole-wheat buns and top the hot dogs with grilled vegetables instead of traditional toppings.

Conclusion:

The Brazilian street cart dog is a delicious and iconic street food that is enjoyed by people all over the world. With its simple yet flavorful ingredients, it's easy to see why this dish is so popular.
