Time 5h15m

Number Of Ingredients 6

1 lb braunchweiger (i prefer koegel's)
12 oz cream cheese (reserve 3 oz. for frosting ball)
6 green onions, chopped fine.
2 Tbsp milk or beer, your choice!
2 Tbsp worcestershire sauce
6 sliced olives or capers, or parsley!! to garnish finished ball.

Steps:

  • 1. Into my Large stand mixer I add the braunschweiger and cream cheese, onions, beer and worcestershire sauce. I mix it very well so there are not big clumps of braunschweiger or cream cheese.
  • 2. I turn it out onto waxed paper or parchment. I form the ball or make smaller ones for gifts to share, at this point. Using the leftover creamcheese for frosting the balls, them garnish them how ever I think is neat. Use capers, green or black olives, parsley...basically anything savory.
  • 3. Place wrapped into the refrigerator for 5 hours to set up!!! You will get loads of compliments and raves for the recipe!!!

Time 1h30m

Yield 1 ball

Number Of Ingredients 6

1 (16 ounce) roll braunschweiger sausage
1 small onion, chopped fine
2 tablespoons chili sauce
2 tablespoons mayonnaise
1 (8 ounce) cream cheese, divided 3oz for ball, 5oz for topping
1/2 cup sliced pimento-stuffed green olives

Steps:

  • Let braunschweiger and cream cheese set at room temperature until softened.
  • Mix braunschweiger, onion, chili sauce and 3oz of cream cheese together until well combined.
  • Form into a ball and refrigerate for 1 hour to firm ball.
  • After 1 hour, remove ball from refrigerator and carefully spread the 5oz of cream cheese over top.
  • Lay sliced olives over the surface.
  • Chill then serve with crackers.

Tips:

  • Use a food processor to finely chop the nuts and onion. This will help the mixture to be smooth and evenly textured.
  • If you do not have a food processor, you can chop the nuts and onion by hand. Be sure to chop them very finely so that the mixture is not gritty.
  • If the mixture is too dry, add a little bit of mayonnaise or cream. You can also add a little bit of water or broth if you prefer.
  • If the mixture is too wet, add a little bit of bread crumbs or flour. You can also add a little bit of grated cheese if you prefer.
  • Be sure to chill the mixture for at least 30 minutes before forming it into balls. This will help the balls to hold their shape better.
  • You can coat the balls in bread crumbs, crushed nuts, or grated cheese before frying them. This will give them a crispy outer coating.
  • Be sure to fry the balls until they are golden brown and crispy. This will help to ensure that they are cooked all the way through.
  • Serve the balls immediately with your favorite dipping sauce.

Conclusion:

Braunschweiger and Nut Balls are a delicious and easy-to-make appetizer that is perfect for any occasion. They are made with a combination of ground pork, nuts, onion, and spices. The balls are then fried until they are golden brown and crispy. Serve them with your favorite dipping sauce and enjoy!
