BRANZINO A LABELLE

Time 15m

Yield 4 servings

Number Of Ingredients 9

3 branzino fillets (about 6 ounces each)
Kosher salt and freshly ground black pepper
1 teaspoon ground turmeric
1 1/2 tablespoons grapeseed oil
2 tablespoons unsalted butter
1 tablespoon roughly chopped fresh parsley
1 1/2 teaspoons minced garlic
2 medium heirloom tomatoes, sliced
1 lemon, sliced into wedges

Steps:

  • Season the branzino fillets with salt and a big pinch of pepper. Sprinkle with the turmeric.
  • Heat the grapeseed oil in a large pan over medium heat until shimmering. Add the fillets to the pan and cook for 2 minutes. Flip and add the butter, parsley and garlic to the pan. Continue cooking, basting the fish as the butter melts, until cooked through, about 2 minutes.
  • Transfer the fillets to a platter. Garnish on the side with the tomatoes and lemon wedges.

Tips:

  • Choosing the Right Branzino: Opt for a branzino that is firm to the touch and has clear, bright eyes. The fish should also have a mild, fresh scent.
  • Achieving Crispy Skin: To achieve perfectly crispy skin, ensure that the branzino is thoroughly dried before cooking. Additionally, score the fish's skin to allow the heat to penetrate evenly. Consider using a cast iron skillet or grill pan for optimal crispiness.
  • Cooking the Branzino: For pan-frying, use a combination of butter and olive oil to prevent the butter from burning. Cook the fish skin-side down first, then flip it gently once the skin is crispy and golden brown. Alternatively, baking the branzino in the oven is a simple and reliable method.
  • Choosing Quality Bacon: Select thick-cut bacon for a satisfying BLT sandwich. Applewood-smoked or hickory-smoked bacon adds a delicious smoky flavor.
  • Building the Sandwich: Toast the bread to add an extra layer of texture and flavor. Layer the crispy bacon, juicy tomato slices, and fresh lettuce on top of the branzino. Drizzle with a tangy mayonnaise-based sauce for a complete and satisfying BLT experience.

Conclusion:

The branzino BLT is a creative and flavorful dish that combines the best of both worlds – tender, flaky fish and the classic flavors of a BLT sandwich. This recipe elevates the traditional BLT by incorporating the delicate flavors of branzino, resulting in a harmonious and satisfying meal. Whether you enjoy it as a casual lunch or a sophisticated dinner, the branzino BLT is sure to impress with its crispy skin, juicy fish, and mouthwatering combination of flavors.
