MOM'S WONTON

Mom's Wonton image

I recently learned to make homemade won tons from my mother. They can be deep fried as an appetizer, but I prefer them in a rich, homemade chicken broth with baby bok choy or other leafy greens. Extras will freeze well for later enjoyment.

Time 1h

Yield 6

Number Of Ingredients 15

½ pound ground pork
¾ pound cooked shrimp, shelled, deveined and coarsely chopped
2 tablespoons minced green onions
1 tablespoon minced fresh ginger root
2 tablespoons chopped water chestnuts
1 teaspoon cornstarch
¼ teaspoon garlic salt
1 pinch white sugar
1 tablespoon dry sherry
1 teaspoon chili oil
1 tablespoon soy sauce
¼ teaspoon sesame oil
1 (16 ounce) package wonton skins
1 pinch garlic salt
1 egg white

Steps:

  • In a large skillet, cook the ground pork over medium heat until no longer pink.
  • In a large mixing bowl, combine the shrimp, ground pork, green onions, ginger, and water chestnuts. Mix in the cornstarch, garlic salt, and sugar. Mix in the dry sherry, chili oil, soy sauce, and sesame oil.
  • Place about one teaspoon of the mixture in the center of each won ton wrapper. Bring points of the wrapper together (in a triangular shape) and pinch the edges, sealing them closed with egg whites.

CHOCOLATE BANANA FRIED WONTONS WITH GRAND MARNIER® CARAMEL SAUCE

Chocolate Banana Fried Wontons with Grand Marnier® Caramel Sauce image

I tried banana wontons at a Chinese restaurant and liked them, so i thought i'd make up a recipe at home when I was making an Asian-themed dinner. My boyfriend said they were better than the restaurant's! They're great with ice cream. Substitute any kind of liqueur you want for the Grand Marnier® - be creative! many different fruit flavors seem to go well with this dessert.

Time 45m

Yield 15

Number Of Ingredients 12

2 very ripe bananas
⅓ cup miniature semi-sweet chocolate chips
¼ teaspoon ground cloves
¼ teaspoon ground cinnamon
¼ teaspoon vanilla extract
½ (14 ounce) package wonton wrappers
oil for frying
½ cup butter
½ cup brown sugar
1 tablespoon brandy-based orange liqueur (such as Grand Marnier®)
2 tablespoons light corn syrup
2 tablespoons miniature semi-sweet chocolate chips

Steps:

  • Place the bananas, 1/3 cup chocolate chips, clove, cinnamon, and vanilla into a mixing bowl, and mash until evenly blended. Alternatively, chop the mixture in a food processor until the chocolate chips have been reduced in size. This will help prevent the chips from poking through the wonton skins as you handle them. It will also change the texture of the filling - you will not have pockets of melted chocolate in the wontons.
  • To make the wontons: Separate and place the wonton wrappers onto your work surface. Spoon about 1 teaspoon of the banana filling onto the center of each wrapper. Use your finger or a pastry brush to lightly moisten the edges of the wonton wrappers with water. Fold one corner of the wrapper over the filling onto the opposite corner to form a triangle. Press the edges together to seal. Repeat with the remaining ingredients.
  • Prepare the sauce by combining the butter, brown sugar, orange liqueur, and corn syrup in a small saucepan. Bring to a simmer over medium heat, and cook until the sugar has dissolved and the sauce is smooth, about 4 minutes. Set aside to cool slightly.
  • Fry the wontons in the hot oil a few at a time until golden brown, about 4 minutes. Turn the wontons over halfway through cooking so they brown evenly. Remove, and drain on a paper towel-lined plate. Serve warm with the caramel sauce. Sprinkle with the remaining 2 tablespoons chocolate chips to garnish.

Tips:

  • Use fresh wonton wrappers: Fresh wonton wrappers are more pliable and easier to work with than dried wrappers. If you are using dried wrappers, be sure to soak them in warm water for a few minutes before using.
  • Don't overfill the wontons: Overfilling the wontons will make them difficult to fold and seal. Aim for about 1 tablespoon of filling per wonton.
  • Fold the wontons tightly: Make sure to fold the wontons tightly so that the filling doesn't leak out during cooking.
  • Cook the wontons in boiling water: Bring a large pot of water to a boil before adding the wontons. This will help to prevent the wontons from sticking together.
  • Cook the wontons until they float: Once the wontons are added to the boiling water, they will sink to the bottom of the pot. Cook them for 3-4 minutes, or until they float to the top of the water.
  • Serve the wontons immediately: Wontons are best served immediately after cooking. You can serve them with a dipping sauce, such as soy sauce or chili sauce.

Conclusion:

Wontons are a delicious and versatile dish that can be served as an appetizer, main course, or side dish. They are easy to make and can be filled with a variety of ingredients, making them a great option for any occasion. With these tips, you can make perfect wontons every time.
